Tonight’s special dinner is a hearty meat dish for my second child, who is competing in a swimming competition! I hope they eat well and swim with all their might. This recipe for LA Galbi, Korean-style grilled short ribs, is perfect for a celebratory meal or just a delightful weekend dinner. The combination of tender meat, rich juices, and a sweet and savory marinade is irresistible!
Main Ingredients- 1kg LA Galbi (Korean short ribs)
Special LA Galbi Marinade- 1 cup soy sauce
- 1 cup water
- 1/2 cup corn syrup or oligodang (rice syrup)
- 1/2 medium onion
- 1/2 medium pear
- 7 cloves garlic, minced
- 1 small piece ginger, minced (about 1 tsp)
- 2 Tbsp sesame oil
- 1 tsp freshly ground black pepper
- 1 cup soy sauce
- 1 cup water
- 1/2 cup corn syrup or oligodang (rice syrup)
- 1/2 medium onion
- 1/2 medium pear
- 7 cloves garlic, minced
- 1 small piece ginger, minced (about 1 tsp)
- 2 Tbsp sesame oil
- 1 tsp freshly ground black pepper
Cooking Instructions
Step 1
If your LA Galbi is frozen, thaw it by soaking in cold water. Rinse and change the water several times to remove any blood. This process usually takes about 2 hours. Properly draining the blood ensures a cleaner taste.

After draining, rinse the ribs once more under cold running water. Pat them thoroughly dry with paper towels or a clean kitchen cloth. Removing excess moisture is crucial for the marinade to adhere well. Place the dried ribs in a bowl.

Now, let’s prepare the marinade. In a blender, combine 1 cup soy sauce, 1 cup water, 1/2 cup corn syrup (or oligodang), the half onion (roughly chopped), half pear (roughly chopped), 7 minced garlic cloves, and the minced ginger. Blend until smooth. (Tip: Adding fruits like pear makes the meat incredibly tender and enhances the flavor.)

Pour the blended marinade over the LA Galbi in the bowl. Gently massage the marinade into the meat, ensuring each piece is well-coated.
