Cooking Instructions
Step 1
The rice cake is the star of Tteokkochi! Today, we’re using wheat rice cakes for their chewy texture. It’s very useful to buy plenty, portion them for tteokbokki and tteokkochi, and store them in the freezer for whenever kids need a snack. Take out the frozen wheat rice cakes and soak them in cold water to soften them.
Step 2
The rice cakes I’m using were pre-portioned for tteokkochi and frozen, so I don’t need any extra preparation and can use them right away, making it super convenient. Having them prepared like this means I can whip up a snack for the kids whenever they want.
Step 3
Now for the heart of Tteokkochi – the delicious sauce! In a bowl, combine 7 Tbsp ketchup, 1 Tbsp gochujang, 1 tsp minced garlic, 1 Tbsp soy sauce, and 7 Tbsp oligo syrup. Mix them well. You can adjust the amount of oligo syrup to your preference for a perfectly sweet taste.
Step 4
Pour the prepared sauce into a pot and simmer over medium-low heat. Don’t boil it for too long, as it might burn. Simmer for about 5 minutes, just until the sauce thickens slightly. Stir continuously to prevent sticking. You’ll have a glossy and delicious sauce.
Step 5
While the sauce is simmering, prepare the rice cakes. Lightly oil a frying pan and place the thawed rice cakes on it. Grill them until golden brown on both sides. This method uses less oil than frying and gives a crispy exterior with a chewy interior. To ensure even cooking, press down gently with a tool like a hoppang press while grilling.
Step 6
Set aside the tteokkochi rice cakes after grilling them until golden brown on both sides.
Step 7
Finally, dip the grilled tteokkochi rice cakes into the sauce, coating both sides thoroughly with a spoon. This ensures the sauce is evenly applied. Sprinkle with sesame seeds if desired for an extra nutty flavor. Your delicious sweet and spicy Tteokkochi is ready for the kids to enjoy!
