Wild Chive Scones

  • 150g Cake flour
  • 4g Baking powder
  • 35g Granulated sugar
  • 2g Salt
  • 35g Cold unsalted butter, cubed
  • 80g Milk
  • 50g Fresh wild chives, washed and finely chopped

Sweet Syrup Glaze

  • 30g Milk
  • 60g Granulated sugar

Cooking Instructions

First, thoroughly wash the wild chives, pat them dry, and then finely chop them. Chopping them into small, consistent pieces will help distribute their unique flavor evenly throughout the scones.

In a large bowl, combine the cake flour, baking powder, sugar, and salt. Whisk them together until well incorporated, ensuring there are no lumps.

Add the cold, cubed butter to the dry ingredients. Using a pastry scraper, bench scraper, or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs, about the size of small peas. Work quickly to keep the butter cold.
