Dough Ingredients

  • 3 cups all-purpose flour
  • 2/3 cup water

Soup Ingredients

  • 1 pack anchovy-kelp broth pack
  • 1 potato
  • A little bit of carrot
  • 1/5 zucchini
  • 1/2 green onion stalk
  • 1/2 Tbsp minced garlic
  • 1 ladleful kimchi juice
  • 1 Tbsp anchovy sauce

Cooking Instructions

Step 1

First, let’s make the hand-pulled dough. Sifting the 3 cups of flour once will result in a smoother dough.

Step 1

Step 2

Gradually add the 2/3 cup of water to the sifted flour while kneading the dough. Knead until you achieve a smooth and elastic dough that’s neither too sticky nor too dry to the touch.

Step 2

Step 3

Wrap the finished dough tightly with plastic wrap and let it rest in the refrigerator for about 2 to 3 hours. This resting period will make the dough chewier.

Step 3

Step 4

The rested dough will become smooth and elastic like this. It will feel springy when you touch it.

Step 4

Step 5

Now it’s time to cook the Kimchi Hand-Pulled Dough Soup. Fill a pot with plenty of water and add the anchovy-kelp broth pack. Bring it to a rolling boil. Once boiling, remove the broth pack. Add the peeled and roughly chopped potato and carrot. Reduce the heat to medium-low and cook until the potatoes are about half done.

Step 5

Step 6

Tear off pieces of the rested dough and thinly drop them into the boiling broth. Tearing the dough thinly and dropping it in will help maintain its chewy texture when cooked. Be careful to drop the pieces without them sticking together.

Step 6

Step 7

Once the dough pieces are in and the soup comes to a boil again, add the sliced zucchini and cook until tender.

Step 7

Step 8

Finally, add the diagonally sliced green onion and boil for another moment until everything is heated through.

Step 8

Step 9

Add 1/2 tablespoon of minced garlic to enhance the savory flavor. Let it simmer until the garlic aroma infuses the broth.

Step 9

Step 10

For a spicy kick, add 1 ladleful of kimchi juice. You can adjust the amount of kimchi juice to your preference. If the seasoning is lacking, adjust with 1 tablespoon of anchovy sauce. The sourness and umami of the kimchi will blend to create a deep and refreshing broth.
