A Potato Salad Recipe with a Gentle Flavor, Made with Newly Harvested Potatoes
Using fresh potatoes freshly dug from the garden, I’ve made a potato salad that reminds me of childhood. Its wonderfully soft texture and fresh vegetables create a delightful culinary experience.
Main Ingredients- 1kg fresh potatoes
- 100g onion
- 100g carrot
- 100g peas
- 3 fresh eggs
Cooking Instructions
Step 1
First, peel and wash the carrots and onion thoroughly, then finely chop them. Bring a pot of water to a boil with a pinch of salt, and briefly blanch the chopped carrots and onion separately. Boil the peas in water with a little salt as well. After boiling, drain the vegetables in a colander to remove all excess water.
Step 2
Hard-boil the eggs beforehand and peel them. Carefully separate the egg whites from the yolks. Finely chop only the egg whites. The yolks will be used for garnish later.
Step 3
Thinly peel the fresh potatoes and cut them into bite-sized pieces, about 2-3 cm. Place the potatoes in a pot with water and 1 tablespoon of coarse salt. Boil until the potatoes are completely tender. Drain the cooked potatoes in a colander to remove water. While they are still hot, mash them thoroughly with a fork or a potato masher until smooth. Ensuring there are no lumps is key.
Step 4
To the bowl with the mashed potatoes, add the drained chopped onion, carrot, and the boiled peas.

Next, add the mayonnaise for a creamy texture, sugar for a subtle sweetness, and finally, 1 teaspoon of fine salt to season the salad.

Using a spatula or spoon, gently mix all the ingredients together. Be careful not to break down the mashed potatoes further. Mix until everything is well combined and the salad has a glossy appearance. This thorough mixing is crucial for blending the flavors.

If serving individual portions, pack the potato salad into small cups or ramekins. Invert the cup onto a serving plate and carefully lift it off to create a neat, rounded shape. Finally, pass the reserved egg yolks through a fine sieve, sprinkling them evenly over the top of the salad for a colorful and appealing finish.
