  • 2 medium potatoes
  • 3 strips of bacon (can be adjusted to taste)
  • 1 handful of green onions (about 1/2 stalk)

  • 1/2 Tbsp salt (adjust to taste)
  • Pinch of black pepper
  • Pinch of dried parsley (optional)

Cooking Instructions

Step 1

First, wash and peel the potatoes. Slice them into matchsticks about 0.5cm thick. Place the sliced potatoes in a bowl, add cold water, and let them soak for about 5 minutes to remove excess starch. This step helps the potatoes cook evenly and prevents them from sticking together. While the potatoes are soaking, chop the bacon into 1cm pieces and thinly slice the green onions.

Drain the soaked potatoes thoroughly using a colander, then gently pat them dry with paper towels to remove any remaining moisture. Heat a frying pan with a generous amount of cooking oil over medium-low heat. Add the dried potato matchsticks and begin to sauté. Cook slowly until the potatoes turn translucent and start to soften.

When the potatoes are almost cooked and have turned white, add 1/2 Tbsp of salt and a pinch of black pepper for seasoning. Then, add the chopped bacon and green onions to the pan and continue to stir-fry. If the pan becomes too dry during cooking, add 1-2 tablespoons of water at a time to prevent the potatoes from burning and ensure they remain moist. Sauté until the bacon’s savory flavor infuses the potatoes.

Once all ingredients are well combined and cooked through, turn off the heat. Sprinkle a pinch of dried parsley over the finished sautéed potatoes for a final touch.
