Chewy and Crispy Homemade Chocolate Scones
Kid-Friendly Chocolate Scones! Achieve a Perfectly Crispy Texture with this Easy Home-Baking Recipe.
Hello everyone! I’m Bebe Tokki Mom, your guide to delicious home-baked treats. Today, I’ve made some wonderful chocolate scones! Perfect for a delightful snack.
Ingredients- 280g cake flour (or all-purpose flour)
- 5g baking powder
- 150g cold unsalted butter, cubed
- 50g granulated sugar
- 100g cold milk
- 120g chocolate chips
- Powdered sugar for dusting (optional)
Cooking Instructions
Step 1
To achieve that perfect crispy texture, it’s crucial to have all your ingredients, especially the butter and milk, thoroughly chilled. If the butter melts during mixing, your scones might turn out dense and lose their signature delightful texture and flavor.
Step 2
Cut your cold butter into small, roughly 1cm cubes. Keeping the butter in these small chunks and quickly incorporating it into the flour mixture helps create flaky layers. For best results, place the cubed butter back in the refrigerator while you prepare other ingredients.
Step 3
In a large bowl, whisk together the cake flour and baking powder. Add the cold butter cubes. Using a pastry blender, two knives, or just your fingertips, quickly cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. Avoid overworking the dough at this stage. A little dusting of flour can help prevent the butter from melting too quickly.
Step 4
Pour in the cold milk and chocolate chips. Gently mix with a spatula or your hands until the dough just comes together. Be careful not to overmix, as this develops gluten and can make the scones tough. Stop mixing as soon as you no longer see dry flour. If the dough is too sticky, you can use a little extra flour or work on parchment paper.
Step 5
Scones are best when they have a beautiful flaky texture! Transfer the dough to a lightly floured surface or a sheet of parchment paper. Gently press and fold the dough repeatedly. This process helps to create those lovely layers that make scones so delightful to eat.
Step 6
Pat the dough into a rectangle or disc about 1.5 to 2 cm thick. Fold it in half, press down gently, then fold again (into thirds or quarters) and press down. Repeat this folding and pressing process about 4-5 times. Finally, shape the dough into your desired scone form (e.g., a square or triangle).
Step 7
Wrap the shaped dough tightly in plastic wrap or place it in an airtight container and refrigerate for at least 30 minutes. This chilling period allows the butter to firm up again and the gluten to relax, resulting in a crispier, more flavorful scone.
Step 8
Preheat your oven to 190°C (375°F). Cut the chilled dough into your desired serving sizes (about 2-3 cm thick) and place them on a baking sheet lined with parchment paper, leaving some space between them. Bake for approximately 20-25 minutes, or until the scones are golden brown and cooked through. Oven temperatures can vary, so adjust the time as needed.
Step 9
Once baked to golden perfection, dust your warm chocolate scones with a sprinkle of powdered sugar, if desired. This adds an extra touch of sweetness for a truly delightful homemade treat! Enjoy them warm with a glass of milk or your favorite hot beverage.
