It’s also a fantastic accompaniment to a cold beer on a late night, making it the perfect side dish and drinking snack.

Main Ingredients

  • Pork belly, 2 servings (approx. 300-400g)
  • Fresh Korean green peppers, 15 pieces
  • Korean chili peppers (Cheongyang), 3 pieces, for a spicy kick
  • Scallion, a small amount, for added aroma

Perfectly Balanced Sauce

  • Dark soy sauce, 4-5 Tbsp
  • Sugar, 3 Tbsp
  • Minced garlic, 1.5 Tbsp

Cooking Instructions

First, prepare the Korean green peppers by removing their stems and cutting them in half lengthwise. If you prefer less heat, you can remove the seeds. Also, remove the stems from the Korean chili peppers and slice them thinly to add a spicy fragrance.

Now, it’s time to cook the delicious pork belly! Heat your pan and stir-fry the pork belly until it’s golden brown and slightly crispy. Since it releases a lot of fat, you can dab it with paper towels periodically to achieve a crispier texture. (I personally use a rotating pan, but a regular frying pan works just as well for a delicious outcome!)

Once the pork belly is partially cooked, it’s time to add the next ingredients.

While the pork belly is cooking nicely, add the sliced scallions to the pan and stir-fry them to release their aroma. Once the scallions are fragrant, add the minced garlic (1.5 Tbsp) and sugar (3 Tbsp) to create the base for your sweet and savory sauce.

Now, gently push the cooked pork belly and scallions to one side of the pan. Pour the dark soy sauce (4-5 Tbsp) into the empty space. Once the soy sauce starts to bubble slightly, stir-fry the pork belly in the soy sauce as if you’re deep-frying it. This technique will give the pork belly a beautiful glaze and a much richer flavor.
