  • 160g Tofu (approx. 1/2 block)
  • 120g Zucchini (approx. 1/4 medium)
  • 1 Tbsp Commercial Doenjang (Soybean Paste)
  • 1/2 Tbsp Minced Garlic
  • 1/2 stalk Scallion

Cooking Instructions

First, prepare 700ml of broth made from anchovies and kelp. If you don’t have homemade broth, using store-bought broth is also a good option.

Place 1 tablespoon of doenjang in a fine-mesh sieve and gently dissolve it in a little water until smooth. This technique ensures the soybean paste mixes evenly into the soup without clumping.

Wash 120g of young Napa cabbage thoroughly under running water. Chop it into bite-sized pieces, about 2-3cm. It’s good to use a mix of the white and green parts.

Pour the prepared broth into a pot and bring it to a boil. Once boiling, add the chopped young Napa cabbage. When the cabbage begins to soften slightly, add 120g of zucchini, also cut into similar bite-sized pieces, and continue to cook.
