How to Make Crispy and Delicious Cheese Potato Croquettes
I absolutely adore croquettes, always buying them from bakeries or ordering them as a side dish with my meals. Recently, I had an abundance of potatoes at home and craved some cheesy potato croquettes. So, I decided to make cheese potato croquettes from scratch! The combination of cheese and potatoes inside is always a winner. Enjoy this recipe for a delightful homemade treat!
Ingredients- 3 medium potatoes
- 1/4 onion
- 1.5 Tbsp mayonnaise
- 2 pinches of black pepper
- 2 eggs
- 2 cups breadcrumbs
- 1 slice cheddar cheese
- 2 packs mozzarella cheese (approx. 200g)
Cooking Instructions
Step 1
First, finely mince the onion. This will add a subtle sweetness and texture to the potato filling.
Step 2
In a separate bowl, crack and whisk the 2 eggs. This egg wash will help the breadcrumbs adhere to the croquettes.
Step 3
Prepare the cheese filling. Cut the slice of cheddar cheese into long strips. If you find it difficult, you can simply fold it before placing it inside. Have the mozzarella cheese ready.

Wash the potatoes thoroughly and place them in a pot of boiling water. Cook until they are tender and easily pierced with a fork, which should take about 15-20 minutes.

Once the potatoes are cooked, peel them while they are still warm. Add the minced onion to the hot mashed potatoes. Season with 2 pinches of black pepper and 1.5 Tbsp of mayonnaise. Adding the onion to warm potatoes helps retain its crispness while mellowing out its raw flavor.

Using a fork or a masher, mash the potatoes and mix them thoroughly with the onion, mayonnaise, and pepper until well combined. Ensure there are no large lumps.

Now, let’s shape the croquettes. Take a portion of the potato mixture and flatten it in your palm, creating a small disc shape.

Place the strips of cheddar cheese onto the flattened potato mixture.

Generously add the mozzarella cheese on top of the cheddar cheese. This is the key to that satisfying cheese pull!

Carefully fold the potato mixture over the cheese to enclose it completely. Shape it into a croquette form, ensuring no cheese is exposed. You can make them round or slightly oval.

Dip each shaped croquette into the whisked egg wash, ensuring it’s fully coated.

Next, roll the egg-washed croquette in the breadcrumbs, pressing gently to help the crumbs adhere evenly.

For an extra crispy coating, dip the breaded croquette back into the egg wash.

Finally, roll the croquette in breadcrumbs again, ensuring a thick and even coating. This double-coating method results in a wonderfully crispy texture. If you prefer a lighter coating, you can skip steps 12 and 13, but make sure to press the breadcrumbs on firmly in step 11.

Heat a generous amount of cooking oil in a pan over medium-low heat. Carefully place the breaded croquettes into the hot oil. Fry them slowly, turning occasionally, until they are golden brown and crispy. Avoid using high heat, as this can burn the outside before the inside is heated through. This slow frying ensures the cheese inside melts perfectly.
