Easy & Delicious Eggplant Rice Bowl
This is a simple yet satisfyingly delicious rice bowl dish! It’s easy to make as it doesn’t require many ingredients. The sweet and savory sauce, combined with the natural juices from the eggplant, creates a wonderfully harmonious flavor. It’s a truly delicious rice bowl! ❣
Ingredients- 1 eggplant
- 1/4 onion
- A little green onion
- 1 egg
- 1 bowl of rice
Seasoning- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 0.3 tsp black pepper

Cooking Instructions
Step 1
Finely shred the green onion and onion. Dice the eggplant into bite-sized cubes (about 1.5 cm).
Step 2
First, make the fried egg. Cook it to your preference (sunny-side up or over easy) and set it aside on a plate. This will be the topping for your rice bowl.
Step 3
Lightly grease a pan with oil over medium-low heat. Add the shredded green onions and sauté until fragrant and lightly golden brown, creating a flavorful scallion oil.

Once the green onions are aromatic, add the diced eggplant and sliced onion to the pan. Stir-fry them together until the vegetables begin to soften. Cooking over medium heat helps prevent the eggplant from breaking down too much.

When the onions become translucent and the eggplant is tender, add the seasoning ingredients: 1 Tbsp soy sauce, 1 Tbsp oyster sauce, and a pinch of black pepper. Stir everything well to coat the vegetables evenly. Continue to sauté for another 1-2 minutes.
Step 6
