This is ‘Kkaejjaengi’s’ super easy pumpkin porridge recipe, made in just 30 minutes using delicious Gyeonggimi Kawaji No. 1 rice. It’s so simple, anyone can make it! Main Ingredients- 500ml water
- 1 handful of mature pumpkin (cut into bite-sized pieces)
- 1 Tbsp shredded carrot
- 1 ladle of cooked rice (day-old or freshly cooked)
Seasoning- 1 tsp salt
- 1 Tbsp sugar
- 1 tsp salt

Cooking Instructions
Step 1
First, prepare your rice. You can use leftover cooked rice from the previous day or freshly cooked rice. Using ‘Gyeonggimi Kawaji No. 1’ rice will add a wonderful depth of flavor to this recipe.
Step 2
We’re using a small mature pumpkin. Place the pumpkin in the microwave and heat for about 5 minutes, in 2-minute intervals. (Tip: If you cut the pumpkin into pieces and place them in a plastic bag before microwaving, it becomes much easier to peel.)
Step 3
Be careful as the pumpkin will be hot after microwaving. Remove the seeds and peel the skin cleanly.
Step 4
In a blender, add the prepared pumpkin first. Pour in just enough water to cover the pumpkin and blend for the first stage. (For 2 servings, use 500ml of water.)
Step 5
Add the ladle of prepared rice (either leftover or freshly cooked) to the blender with the pumpkin mixture. Blend again until the mixture is smooth and creamy, with no lumps.
Step 6
Pour the blended pumpkin porridge mixture into a pot. Cook over low heat, stirring constantly, for about 20 minutes. It’s important to stir frequently to prevent it from sticking to the bottom.
Step 7
Once the porridge has cooked for a while, add the finely shredded carrots and continue to cook. Finally, adjust the seasoning. (For 2 servings: 1 tsp salt + 1 Tbsp sugar). Feel free to adjust the sweetness and saltiness to your preference.

Your warm and delicious pumpkin porridge is ready! Enjoy its smooth texture and sweet flavor for a comforting and satisfying meal.
