Step 1
First, let’s prepare the eggs. Crack 3 eggs into a bowl. Add a pinch of salt and whisk gently with a fork or whisk until the yolks and whites are well combined. It’s important to whisk them smoothly without creating too much foam. Whisking too vigorously can create excess bubbles.

Next, prepare the green onion. Wash the white and green parts of the green onion thoroughly. Finely chop them into about 0.5 cm thick pieces. Using a generous amount will enhance the refreshing flavor of the soup. You can also slice them diagonally if you prefer.
