Essential Ingredients- 2 packs of udon noodles
- 12 medium-sized raw cocktail shrimp
- 10 cherry tomatoes
- 2 handfuls of salad greens
- 1/2 cup canned corn kernels
Dressing Ingredients- 2.5 tablespoons soy sauce
- 2 tablespoons vinegar
- 2 tablespoons oligosaccharide (or corn syrup)
- 4 tablespoons olive oil
- 1 tablespoon sugar
- 1 tablespoon minced garlic
- 1.5 tablespoons sesame oil
- Pinch of salt
- Pinch of black pepper
Optional Ingredient- Pinch of grated Parmesan cheese

Cooking Instructions
Step 1
First, let’s prepare the vibrant dressing that will tie all the flavors together. In a clean bowl, combine 2.5 tablespoons of soy sauce, 2 tablespoons of vinegar, 2 tablespoons of oligosaccharide, 4 tablespoons of olive oil, 1 tablespoon of sugar, 1 tablespoon of minced garlic, and 1.5 tablespoons of sesame oil. Whisk everything together until the sugar has fully dissolved. Season with a pinch of salt and black pepper to enhance the overall flavor. This dressing is key to the dish’s refreshing taste.
Step 2
Now, let’s get the udon noodles ready for their salad debut. Bring a pot of water to a rolling boil. Carefully add the 2 packs of udon noodles and blanch them for just about 2 minutes. Be careful not to overcook them, as they can become mushy! Immediately drain the noodles and rinse them thoroughly under cold running water to firm them up and maintain their delightful chewy texture. Drain them well after rinsing.
Step 3
We’ll quickly cook the cocktail shrimp to perfection. In the same boiling water (or fresh boiling water), add the 12 raw cocktail shrimp and cook for only 1 minute. Shrimp cook very quickly, and overcooking will make them tough. Once cooked, immediately rinse them under cold water to stop the cooking process and set them aside.
Step 4
It’s time to assemble our beautiful Salad Udon! In a large mixing bowl, combine the prepared salad greens, the blanched cocktail shrimp, the halved cherry tomatoes, the well-drained udon noodles, and the canned corn kernels.
