Main Ingredients- 150g Cabbage
- 2 Eggs
- 100g Chicken Breast
- 1 slice Cheddar Cheese
- 1 Tbsp Ketchup
Cooking Instructions
Step 1
First, thinly shred the cabbage. While achieving very fine shreds can be tricky, I personally find that larger pieces offer a more satisfying chew and taste better! Feel free to adjust the thickness to your preference.
Step 2
Place the shredded cabbage in a bowl, add plenty of water, and a splash of vinegar. Let it soak for about 5 minutes. This process helps maintain the cabbage’s crispness and removes any impurities.
Step 3
Use kitchen scissors to cut the chicken breast into bite-sized pieces. Scissors are very convenient for this task, allowing for precise cuts even in tight spaces.
Step 4
Heat a generous amount of olive oil in a pan over medium heat. For a crispier pancake, don’t be shy with the oil! Once the pan is hot, arrange the cabbage into a round shape. Then, pour in the 2 beaten eggs over the cabbage. The eggs not only add flavor but also help bind the pancake together, making it easy to cook without flour. They act as the perfect binder!
Step 5
Once the bottom side is golden brown, carefully flip the pancake using a plate. Spread a thin layer of ketchup over the flipped cabbage pancake. Then, evenly distribute the finely chopped chicken breast on top. It’s recommended to cut the chicken breast smaller for easier eating. Finally, place the slice of cheddar cheese on top of the chicken breast.
Step 6
Cover the pan with a lid and cook over low heat until the cheese is completely melted. These cabbage pancakes are delicious even without extra sauce, offering a naturally savory flavor. The cabbage retains its crispness, enhanced by the savory notes from cooking, creating a wonderful combination with the other ingredients. A whole plate provides a satisfying and truly healthy meal!
