Super Sweet Corn Jarred & Corn Kernels

  • 4 Super Sweet Corn cobs
  • 1 liter Water (for jarring)
  • 10 Tbsp Sugar (approx. 100g, for jarring)
  • 1 1/2 Tbsp Salt (approx. 15g, for jarring)

Cooking Instructions

Step 1

First, we’ll make the grilled super sweet corn with butter. Preheat a pan over medium-low heat, then melt a piece of butter. Once the butter is melted, place the husked super sweet corn cob in the pan. Rotate the corn periodically to ensure it grills evenly on all sides until it’s nicely golden brown and slightly caramelized. This browning adds a wonderful depth of flavor.

Step 1

Step 2

This grilled corn is delicious as is, but we’re going to elevate it further by adding a few flavorful toppings for extra taste and visual appeal. This step is all about enhancing the aroma and flavor.

Step 2

Step 3

Sprinkle grated Parmesan cheese, dried parsley flakes, and paprika powder generously over the grilled corn, according to your preference. Parmesan adds a savory, cheesy note, parsley brings freshness, and paprika offers a hint of sweetness and color. Feel free to experiment with other seasonings you have on hand, like garlic powder or other herbs.

Step 3

Step 4

Now, let’s prepare the preserved super sweet corn in a jar, which is great for storage. Before you begin, it’s crucial to properly sterilize your glass jars. Place the jars upside down in a pot, fill with cold water, and bring to a boil. Let them boil for about 5 minutes. Carefully remove the jars, shake off excess water, and place them upright to dry. The residual steam will help them dry completely.

Step 4

Step 5

We’ve prepared 4 super sweet corn cobs for the jarred corn. Using a mix of 2 fresh and 2 pre-steamed cobs can offer a nice balance of texture and flavor. (You can also use all fresh or all steamed, if preferred.)

Step 5

Step 6

Next, we need to remove the corn kernels from the cobs. You can do this by running a knife down the length of the cob to slice off the kernels, then gently picking them off with your fingers. Super sweet corn kernels are quite tender, so they often pop off easily. Gently slicing them first with a knife and then picking them off by hand is a good method.

Step 6

Step 7

Place the removed corn kernels into the sterilized pot. Add 1 liter of water for the brining liquid.

Step 7

Step 8

Now, add 10 tablespoons of sugar and 1 1/2 tablespoons of salt to the pot. This will create a sweet and savory brine. You can adjust the sugar and salt ratio to your liking.

Step 8

Step 9

Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 10 minutes, allowing the corn kernels to cook and absorb the flavors. Be careful not to overcook, as the corn can become mushy.

Step 9

Step 10

While the corn and liquid are still hot, carefully transfer them into the sterilized glass jars. Make sure to include the flavorful cooking liquid along with the corn kernels.

Step 10

Step 11

Seal the jars tightly with their lids, then turn them upside down. This vacuum-sealing process ensures preservation. When you open the jar later, you should hear a satisfying ‘pop’ sound, indicating a proper seal.

Step 11

Step 12

Allow the jars to cool completely at room temperature, then store them in the refrigerator. This way, you’ll have delicious corn kernels ready to enjoy anytime!

Step 12

Step 13

We tried the preserved corn the next day after taking it out of the refrigerator, and wow! It tastes exactly like the delicious corn kernels you buy at the store! It offers a delightful chewiness and sweetness that’s different from simply steamed super sweet corn. Enjoy this wonderful corn recipe from start to finish!
