  • 100g Fernbrake (cooked)
  • 1/3 stalk Scallion
  • 4 cups (800ml) Water
  • 1 Tbsp Soy sauce (for broth)

Seasoning Mix

  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sesame oil
  • 1 Tbsp Soy sauce
  • Pinch of Salt (to taste)
  • Pinch of Black pepper
  • 1/2 Tbsp Grapeseed oil
  • 1/2 Tbsp Minced garlic
  • 1/2 Tbsp Gochujang (Korean chili paste)

Cooking Instructions

First, gently press the thinly sliced beef with paper towels to remove any excess blood. This step is crucial for a clean and less gamey flavor in your Yukgaejang.

In a mixing bowl, combine 2 Tbsp of gochugaru, 1 Tbsp of sesame oil, and 1/2 Tbsp of grapeseed oil. Mix them well. Pre-soaking the chili flakes in oil like this helps to deepen the color and mellow out the spiciness.

To the soaked chili flakes, add the remaining seasoning ingredients: 1 Tbsp soy sauce, a pinch of salt, a pinch of black pepper, 1/2 Tbsp minced garlic, and 1/2 Tbsp gochujang. Stir everything together until you have a smooth and fragrant seasoning paste.

Prepare the mushrooms by tearing the oyster mushrooms into bite-sized, thin strips. Cut the cooked fernbrake into approximately 2-3 cm lengths, ensuring they are not too long for easy eating.

Slice the scallion into 6cm lengths. Blanch them briefly in boiling water for about 10-20 seconds to remove their pungent, raw flavor. Immediately rinse under cold water and squeeze out excess moisture.

Add the prepared beef, torn oyster mushrooms, and cut fernbrake to the bowl with the seasoning mix. Gently massage the ingredients with the seasoning until they are evenly coated. Allowing this to marinate for at least 10 minutes will enhance the flavors.

Transfer the marinated ingredients into a pot. Pour in 4 cups of water and 1 Tbsp of soy sauce for the broth. Your delicious Mushroom Yukgaejang is now ready to be cooked.
