  • 1/2 Cucumber
  • 2 Imitation crab sticks (krab meat)
  • 1 Tbsp Nuts (e.g., walnuts)
  • 4 Tbsp Mayonnaise

  • 1 Tbsp Vinegar
  • 1 Tbsp Salt

Cut the 1/2 cucumber in half lengthwise. Then, scoop out and discard the seedy core. Removing the seeds prevents excess moisture, leading to a crispier salad.

Thinly julienne the seeded cucumber. Sprinkle 1 Tbsp of salt over the julienned cucumber and gently mix. Let it sit for a while to draw out moisture, ensuring a crisp texture. This can be done while preparing the other ingredients.

Shred the imitation crab sticks following their natural grain. Shred them into bite-sized pieces so they mix well with the shirataki noodles.
