Healthy Fruit Preserve Made with Summer Fruits
Create a healthy and delicious fruit preserve using easy-to-spoil summer fruits! This preserve can be wonderfully used in pancakes, fruit bingsu (shaved ice), yogurt, fruit smoothies, frozen desserts, or in baking muffins and breads. By sugaring the fruits, their flavors are concentrated and their shelf life is extended, allowing you to enjoy the refreshing taste of summer fruits year-round.
Fruit Ingredients- 700g fresh cherries
- 500g ripe raspberries
- 540g pineapple (prepared weight)
Sweeteners and Flavor Enhancers- 1 Tbsp coconut sugar (adjust to taste)
- 1 Tbsp vanilla sugar (for a subtle aroma)
- 3 Tbsp tagatose sugar (natural sweetener, adjust sweetness)
- 1 Tbsp aronia powder (for antioxidants and color)
- 100ml aronia syrup
- 1 Tbsp coconut sugar (adjust to taste)
- 1 Tbsp vanilla sugar (for a subtle aroma)
- 3 Tbsp tagatose sugar (natural sweetener, adjust sweetness)
- 1 Tbsp aronia powder (for antioxidants and color)
- 100ml aronia syrup
Cooking Instructions
Step 1
First, prepare the fruits. Rinse the raspberries gently under running water using a colander, then shake the colander to drain excess water. Wash the cherries thoroughly, remove the stems, and then remove the pits. For the pineapple, use one that has already been peeled and cut into bite-sized pieces. (You can use any summer fruit you like for this recipe; strawberries, blueberries, or peaches would also work well.)
Step 2
Place all the prepared fruits into a large bowl and mix them gently together. This allows the fruits to mingle and share their flavors.
Step 3
Add all the types of sugar (coconut sugar, vanilla sugar, and tagatose sugar) to the bowl with the fruits all at once. You can adjust the types and amounts of sugar according to your preference. (Sugar helps draw out moisture from the fruits and acts as a preservative.)
Step 4
After adding the sugar, gently stir the mixture to coat the fruits evenly without crushing them. It’s important to maintain the fruit’s shape as much as possible while ensuring the sugar is well distributed. Stirring for about 10 minutes should start to release juices from the fruit.
Step 5
Now, add the aronia powder and aronia syrup. Gently mix again until everything is well combined. Aronia is rich in antioxidants, making it healthy, and it adds a beautiful color and deep flavor to the preserve.
