Making a Gorgeous Apple Pie Easily with a Rice Cooker
We’ve adapted Ttabongyi Kitchen’s apple pie recipe to be made conveniently in a rice cooker. Now you can enjoy a wonderful homemade apple pie without a complex oven! The harmony of the sweet and fragrant apple filling with the crispy pie crust is simply exquisite!
Pie Crust Ingredients- 100g (approx. 3/4 cup) cake flour
- 55g (approx. 5 Tbsp, heaping) cold butter
- 1g (approx. 1/4 tsp) salt
- 30g (approx. 3 Tbsp) cold water
Cooking Instructions
Step 1
First, let’s make the pie dough. Prepare 100g of cake flour (about 3/4 cup in a mug). You can also use whole wheat flour, but cake flour will give you a softer texture. Sifting the flour will result in a smoother, finer dough.
Step 2
In the sifted flour, add 55g of cold butter (about 5 heaped tablespoons), 1/4 teaspoon of salt (1g), and 30g of cold water (3 tablespoons). Mix to form a dough. Here’s a key tip: using cold butter and cold water is crucial for achieving a flaky and crisp pie crust!
Step 3
Gently knead the dough with your hands until it just comes together, then shape it into a ball. The dough should be slightly moist, not too dry. If it seems too dry, add about 1/2 tablespoon more water to help it come together. Be careful not to overwork the dough.
Step 4
Place the dough in a plastic bag or an airtight container and let it rest in the refrigerator for 15 minutes. This chilling period allows the gluten to relax, making the dough easier to handle.
Step 5
While the dough is chilling, let’s prepare the delicious apple filling. If you prefer a tart and sweet flavor, using green apples is highly recommended. Peel, core, and slice the apple into approximately 5mm thick pieces.
Step 6
In a bowl, combine the sliced apples with 1/2 tablespoon of lemon juice, 1/2 teaspoon of cinnamon powder, and 30g of sugar (about 3 tablespoons). Mix well to coat the apples. Place the prepared apple filling directly into the rice cooker and cook using the ‘Multi-Purpose Cook’ (or ‘Steam’) function for 20 minutes. If you don’t have a rice cooker, you can simmer this mixture in a pan over low heat until the sugar melts and the apples soften. The cinnamon powder adds wonderful aroma, but you can omit it if you prefer.
Step 7
While the apple filling is cooking, take the chilled dough out of the refrigerator. Divide about 3/5 of the dough for the pie base. Place parchment paper or aluminum foil on a clean surface, and roll out this portion of the dough to about 3mm thickness, shaping it into a circle that fits your rice cooker pot. Be gentle as the dough can be fragile.
Step 8
Roll out the remaining 2/5 of the dough to about 3mm thickness for the pie’s top crust. Using a bread knife, cut this dough into 8 strips, approximately 1cm wide. These strips will form a lattice pattern on top.
Step 9
Gently fold the edges of the pie base dough inwards to create a rim. Then, prick the entire surface of the bottom crust with a fork. This helps prevent the crust from puffing up unevenly during baking.
Step 10
Spread the cooked apple filling evenly over the prepared pie base. After adding the filling, wash the rice cooker pot clean. It’s helpful to add a little water to the bottom of the rice cooker before baking the pie to make cleaning easier later.
Step 11
Arrange the cut dough strips over the apple filling in a lattice pattern. Gently press the edges of the pie crust together to seal. To ensure it fits well in the rice cooker, aim for a total diameter of about 15cm.
Step 12
Because the pie is quite delicate after assembly, create handles by folding and crimping the ends of the parchment or aluminum foil you used underneath. This will make it much easier to lift the pie out of the rice cooker. Tip: You can also clean the rice cooker and assemble the pie directly in it immediately after the apple filling is done.
Step 13
After thoroughly drying the cleaned rice cooker pot, carefully place the pie inside using the foil handles. Select the ‘Fermented Dough Baking’ (or a similar function like ‘Bake’) on your rice cooker and set it for 40 minutes + 40 minutes (bake twice). Cooking times may vary depending on your rice cooker model, so adjust accordingly. Aim for a total of 80 minutes of baking.
Step 14
Voila! Your delicious homemade apple pie is ready. It tastes best when served warm right after baking. You can also enjoy it with a scoop of ice cream or a dollop of whipped cream. Enjoy your baking! 🙂
