Perfect for when you have a lack of appetite! Chase away the summer heat with these refreshing, sweet, and tangy Yeolmu Kimchi noodles. The combination of crisp yeolmu kimchi and bouncy somyeon noodles is simply exquisite.
Main Ingredients (using a standard Korean measuring cup)- 2 cups well-fermented Yeolmu Kimchi
- 200ml Yeolmu Kimchi brine
- 200g Somyeon (thin wheat noodles)
- 1/4 fresh cucumber
- 2 hard-boiled eggs
Seasoning Ingredients (using a tablespoon)- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp vinegar
- 1.5 Tbsp sugar
- 2 Tbsp minced garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Jin Ganjang (Korean soy sauce for soup)
- 1 Tbsp sesame oil
- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp vinegar
- 1.5 Tbsp sugar
- 2 Tbsp minced garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Jin Ganjang (Korean soy sauce for soup)
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
To make preparing your Yeolmu Noodles easier, have your Yeolmu Kimchi and its brine ready beforehand. Cut the Yeolmu Kimchi into bite-sized pieces.
Step 2
Wash the cucumber, remove the seeds, and julienne it thinly. While the noodles are cooking, boil the eggs. Fill a pot with plenty of water, add the eggs, and boil over medium heat for about 10-15 minutes. This will result in perfectly cooked eggs, somewhere between soft and hard-boiled.
Step 3
In a large bowl, combine the gochujang, vinegar, sugar, minced garlic, gochugaru, jin ganjang, and sesame oil. Mix thoroughly with a whisk or chopsticks until smooth and well combined. This creates your delicious noodle sauce.
Step 4
Pour the chilled Yeolmu Kimchi brine into the prepared seasoning mix. This step enhances the depth of flavor for your Yeolmu Kimchi noodles. Taste and adjust sweetness or tanginess by adding more sugar or vinegar if desired.
Step 5
Bring a large pot of water to a rolling boil. Once boiling, add the somyeon noodles and cook for approximately 5 minutes. Somyeon can easily overcook or boil over, so keep an eye on it while it cooks. Stir occasionally with chopsticks or add a little cold water to prevent boiling over and ensure even cooking. You can check for doneness by seeing if the noodles float.
Step 6
Drain the cooked somyeon noodles in a colander and immediately rinse them under cold running water several times. This process removes excess starch and cools the noodles, making them delightfully chewy and firm.
Step 7
After rinsing and draining, ensure as much water as possible is removed from the noodles. Place the drained somyeon in a serving bowl. Generously ladle the prepared Yeolmu Kimchi sauce over the noodles. Gently mix the noodles and sauce together until well coated. Finally, top with the crisp Yeolmu Kimchi, julienned cucumber, and boiled eggs for a beautiful presentation. Your refreshing and delicious Yeolmu Noodles are now ready to enjoy!
