First, wash the zucchini thoroughly under running water. Cut it in half lengthwise, then slice into half-moon shapes about 4-5mm thick. Trim the tough ends of the king oyster mushrooms and slice them about 2-3mm thick. Thinly slice the onion into strips about 2mm thick.

Finely chop the green onion and measure out the minced garlic. These two ingredients will add a wonderful depth of flavor to your dish.

Heat a stir-fry pan over medium heat. Add the prepared zucchini and king oyster mushrooms, then drizzle with 2 tablespoons of olive oil, ensuring it coats the ingredients evenly.
