Lettuce Salad Ingredients- 8 fresh lettuce leaves
- 50g carrot
- 80g onion
Lettuce Salad Dressing- 0.4 Tbsp minced garlic (approx. 1/2 tsp)
- 2 Tbsp soy sauce
- 0.7 Tbsp red chili powder (approx. 1 tsp)
- 0.7 Tbsp corn syrup or oligosaccharide (approx. 1 tsp)
- 0.7 Tbsp perilla oil (approx. 1 tsp)
- Sesame seeds, for garnish
- 0.4 Tbsp minced garlic (approx. 1/2 tsp)
- 2 Tbsp soy sauce
- 0.7 Tbsp red chili powder (approx. 1 tsp)
- 0.7 Tbsp corn syrup or oligosaccharide (approx. 1 tsp)
- 0.7 Tbsp perilla oil (approx. 1 tsp)
- Sesame seeds, for garnish
Cooking Instructions
Step 1
▶ Gently wash each lettuce leaf under running water, rubbing softly to remove any dirt. Rinse them one by one about twice to ensure they are thoroughly clean. After washing, place the lettuce on a sieve to drain any excess water. Removing all water is key to preventing a diluted dressing.
Step 2
▶ Once the lettuce is drained, trim off any tough ends of the stems and any bruised or discolored parts of the leaves. Then, tear the lettuce leaves into bite-sized pieces by hand. Tearing by hand helps to preserve the fresh, crisp texture better than cutting.
Step 3
▶ Peel and wash the carrot and onion. Slice them into thin julienne strips, about 2-3mm thick. The carrot will add a vibrant color, and the onion will contribute a subtle sweetness and crispness.

▶ In a small bowl, combine the soy sauce (2 Tbsp), corn syrup or oligosaccharide (0.7 Tbsp), red chili powder (0.7 Tbsp), perilla oil (0.7 Tbsp), and minced garlic (0.4 Tbsp). If you like, you can add sesame seeds now, or save them for garnishing later. Whisk everything together until well combined.

▶ Add the julienned carrot and onion to the dressing bowl. Gently toss them to coat evenly with the dressing. Mixing the vegetables with the dressing first allows the flavors to meld beautifully.

▶ After tossing the carrots and onions, add the torn lettuce leaves to the bowl.

▶ Gently toss the lettuce with the vegetables and dressing using your hands. Avoid overmixing or squeezing too hard, as this can make the lettuce soggy. Instead, lightly press down with your palms as you mix to wilt the lettuce slightly while maintaining its crispness. The goal is to lightly coat the leaves with the dressing.
Step 8
▶ Taste the salad and adjust the seasoning if necessary. If it’s not salty enough for your liking, add a tiny bit more soy sauce. If you prefer it a little sweeter, add a touch more corn syrup or oligosaccharide. Once the flavors are balanced, sprinkle with sesame seeds and serve immediately.
