- Soft Tofu – 1 packet (approx. 350g)
- Egg – 1
Cooking Instructions
Step 1
The star of today’s recipe is ‘Cup Noodles’! Make sure you have the spicy flavor variety, as it will form the base of our delicious soft tofu stew.
Step 2
Open the Cup Noodle packaging and separate the noodles, powder soup base, and dried vegetable flakes. Set the konjac noodles aside on a plate for later use.
Step 3
Using the Cup Noodle container as a guide, measure your water. Typically, fill it up to the indicated water line inside the cup. This is usually the portion for one serving. For two servings, you’ll need water equivalent to two Cup Noodles.
Step 4
Pour the measured water into a pot or the Cup Noodle container and bring it to a boil. Once the water is rapidly boiling, add both the powder soup base and the dried vegetable flakes.
Step 5
Gently tear open the soft tofu packet and carefully slide the tofu into the pot, trying not to break it apart. If making one serving, add the entire packet.
Step 6
Since soft tofu is delicate, use a spoon to gently break and slice it into bite-sized pieces directly in the pot. Be careful not to mash it too much.
Step 7
For an even richer flavor, you can pre-season the broth by adding 1 Tbsp of Gochugaru (Korean chili flakes) and 1 Tbsp of soup soy sauce or fish sauce. This step enhances the taste beyond just the Cup Noodle seasoning.
Step 8
Taste the broth. Once the seasoning is to your liking, add the Cup Noodle noodles that you set aside earlier.
Step 9
Simmer until the noodles are fully cooked. This usually takes about 1-2 minutes over medium heat. Be mindful not to overcook, as the noodles can become mushy.
Step 10
The finishing touch! Crack a fresh egg directly into the stew. Let it cook for a moment until the egg white is set, and your simple Cup Noodle soft tofu stew is complete.
Step 11
If you prefer a spicier kick, you can add a pinch of black pepper or some finely chopped Cheongyang peppers (Korean chili peppers) according to your preference.
Step 12
To add a lovely aroma and nutty flavor, drizzle about 0.5 Tbsp of sesame oil over the stew just before serving.
Step 13
It’s amazing how easy it is to make this soft tofu stew without needing to prepare a separate sauce, thanks to the flavorful Cup Noodle soup base! This recipe is perfect for those busy days when you want a delicious and hearty meal without the fuss. Give it a try!
