  • 1.5 Tbsp minced garlic
  • 2 stalks green onion (white parts)
  • 1/2 onion (diced)
  • 150g ground pork
  • 5 Tbsp chunjang (black bean paste)
  • 1 Tbsp oyster sauce
  • 1 Tbsp sugar

Cooking Instructions

Step 1

Let’s start by making the delicious jjajang sauce! Heat a deep, wide pan over medium heat and add 5 tablespoons of cooking oil. Add 1.5 tablespoons of minced garlic, 2 stalks of green onion (white parts, finely chopped), and 1/2 diced onion. Sauté until fragrant. Once the vegetables soften and start to sizzle, add 150g of ground pork and stir-fry until it’s completely cooked through and no longer pink.

Step 1

Step 2

Once the pork is cooked, add 5 tablespoons of chunjang, 1 tablespoon of oyster sauce, and 1 tablespoon of sugar. Stir well to combine all ingredients. Simmer for about 2-3 minutes until the sauce bubbles and thickens slightly to create the jjajang sauce. This amount is enough to make jjajang tteokbokki for 2-3 servings.

Step 2

Step 3

Now, let’s make the jjajang fried rice. Heat a clean pan over medium-low heat, add 1 tablespoon of cooking oil, and crack 1 egg into it to make a sunny-side-up egg.

Step 3

Step 4

While the egg is still half-cooked (runny yolk), gently break the yolk with a chopstick or spoon and lightly scramble it. Add 1 tablespoon of the pre-made jjajang sauce to the pan and mix it well with the scrambled egg. The savory egg and salty jjajang sauce will create a rich flavor.

Step 4

Step 5

Add 1 bowl of warm rice to the pan. Using the back of a spoon, gently press down to break up any clumps of rice and stir-fry until the rice is evenly coated with the jjajang sauce. Make sure every grain of rice absorbs the delicious jjajang sauce flavor.

Step 5

Step 6

Finally, sprinkle in 1/2 tablespoon of toasted sesame seeds for nutty flavor and add the chopped green parts of 1/2 green onion stalk for a fresh aroma. Stir gently to combine and finish the delicious jjajang fried rice.

Step 6

Step 7

Transfer the completed jjajang fried rice into a rice bowl and gently invert it onto a plate to create a neat mound. This is the first step towards presenting your appetizing jjajang fried rice.

Step 7

Step 8

Now, let’s prepare the ‘egg blanket’! Pour 2 fresh eggs into a blender and blend until smooth. Heat a non-stick pan over low heat, add a little cooking oil, and wipe it with a paper towel to lightly coat the pan. Pour a thin layer of the blended egg mixture into the pan. Cook only one side until it’s just set, creating a thin crepe that is slightly undercooked for a soft and moist texture, like a watercolor painting.

Step 8

Step 9

Carefully place the soft egg crepe you’ve just made on top of the jjajang fried rice, covering it like a blanket. This completes your moist and magnificent jjajang fried rice. Each bite will be a delightful combination of the soft egg and the richly flavored fried rice!
