Kohlrabi has been a frequent guest on our dining table lately! Today, we’ve created a special kohlrabi rice for a unique meal. It’s incredibly easy and convenient using an electric pressure cooker. Enjoy the delightful crunch of kohlrabi, the chewiness of beef, the aromatic shiitake mushrooms, and the crispiness of kimchi all in one flavorful rice dish.

Main Ingredients

  • 1 Kohlrabi (medium size)
  • 400g Beef (for bulgogi)
  • 5 Shiitake Mushrooms (fresh or dried)
  • 4 leaves Napa Cabbage Kimchi (well-fermented)
  • 2.5 servings Rice (approx. 300g)

Seasoning Ingredients

  • 4 Tbsp Soy Sauce (for rice) + 1 Tbsp (for beef/mushrooms marinade)
  • 1/2 Tbsp Sesame Oil (for beef marinade) + 1/3 Tbsp (for mushroom marinade) + 1/3 Tbsp (for kimchi)
  • 1/2 Tbsp Sesame Seeds (for beef marinade) + 1/3 Tbsp (for mushroom marinade) + 1/3 Tbsp (for kimchi)

Cooking Instructions

Step 1

First, peel the kohlrabi and julienne it into thick strips. Cutting it slightly thicker will enhance the texture, so avoid slicing it too thinly.

Use thinly sliced beef intended for bulgogi. It’s important to blot out the blood with paper towels for a clean taste without any gamey odor. Marinate the blotted beef with 1 Tbsp soy sauce, 1/2 Tbsp sesame oil, and 1/2 Tbsp sesame seeds. Mix well.

Remove the tough stems from the shiitake mushrooms and prepare the caps. Marinate the mushrooms with 1 Tbsp soy sauce, 1/3 Tbsp sesame oil, and 1/3 Tbsp sesame seeds. For the well-fermented napa cabbage kimchi, remove the excess filling and squeeze out the kimchi juice thoroughly. Then, mix the kimchi with 1/3 Tbsp sesame oil and 1/3 Tbsp sesame seeds. Marinating each ingredient separately helps to enhance its individual flavor while creating a harmonious overall taste.

Wash the rice thoroughly and drain it in a colander. Place the washed rice into the electric pressure cooker pot. Use slightly less water than you normally would for cooking rice, as the kohlrabi and other ingredients will release moisture during cooking.

After adding the rice to the cooker, evenly layer the prepared kohlrabi strips, marinated beef, shiitake mushrooms, and seasoned kimchi on top. We’re loading it up with plenty of ingredients for a hearty rice dish!

Select the ‘White Rice High Pressure’ mode on your electric pressure cooker and begin cooking. The cooking time is approximately 35 minutes (this may vary depending on your pressure cooker model). Once the rice is cooked, you’ll have a pot full of kohlrabi rice with a generous amount of kohlrabi! It’s wonderfully delicious when mixed with a simple sauce made from 4 Tbsp soy sauce, a little sesame oil, and sesame seeds.
