Pollock Roe Mayo Canapés

I often make various wine appetizers to enjoy my hobby of drinking wine. Canapés are versatile and easy to make, with endless possibilities for ingredient combinations on biscuits or small pieces of bread. They also look vibrant, making them great as an appetizer for entertaining guests. Today, I made canapés using savory low-salt pollack roe. I cut one strip of pollack roe in half. I mixed half with mayonnaise to make pollack roe mayonnaise, and the other half with cream cheese to make pollack roe cream cheese, then placed them on biscuits. For color and texture, I prepared small amounts of simple ingredients like cucumber, cherry tomatoes, basil leaves, and Cheongyang chili peppers. I don’t usually eat stevia tomatoes because their sweetness is too artificial, but the savory pollack roe and stevia tomatoes go surprisingly well together. You can use regular cherry tomatoes, but stevia tomatoes are even better if you have them. Canapés are a dish that even children can make if the ingredients are ready. You can change the toppings according to your preference using other fruits or vegetables, and since you just need to slice and place them, it’s very easy. The saltiness of the pollack roe is neutralized by the cucumber and tomatoes. Personally, I think it goes better with cream cheese. The savory pollack roe combined with the slightly sweet cream cheese creates a delightful sweet and salty sensation. They are easy to hold and eat, and they look beautiful, making them a perfect wine accompaniment.

Ingredients

  • 15 low-salt crackers
  • 1 strip low-salt pollack roe
  • 1 Tbsp Mirin (rice wine)
  • 1 Tbsp cream cheese
  • 1 Tbsp mayonnaise
  • A little sesame oil
  • 2 Stevia cherry tomatoes
  • 1/2 cucumber
  • 10 small basil leaves
  • 1/2 Cheongyang chili pepper

Cooking Instructions

Step 1

First, prepare the pollack roe. Place the pollack roe in a bowl and mix with 1 tablespoon of Mirin (rice wine). Let it marinate for about 10 minutes. This helps to remove any fishy smell and tenderize the roe.

Remove the marinated pollack roe from the bowl. Carefully cut it in half lengthwise. Then, using the back of a spoon or a knife, gently scrape out the roe (the small eggs) from each half. Be careful not to mash the roe.

Take half of the extracted pollack roe and place it in a separate small bowl. Add 1 tablespoon of mayonnaise and a little sesame oil. Mix them together thoroughly to create the pollack roe mayonnaise. The addition of sesame oil enhances the nutty flavor, making it even more delicious.

In another small bowl, combine the remaining half of the pollack roe with 1 tablespoon of cream cheese. Mix well until smooth to create the pollack roe cream cheese. The creamy texture of the cream cheese beautifully complements the savory pollack roe.

Prepare the fresh toppings for the canapés. Wash the cucumber, cherry tomatoes, Cheongyang chili pepper, and basil leaves thoroughly. Slice the cucumber into thick pieces, about 0.7-1 cm thick. These thicker slices will help balance the saltiness of the pollack roe and add a refreshing element to the canapés. Thinly slice the Stevia cherry tomatoes and then cut each slice into quarters.

Now, let’s assemble the canapés! Place a slice of the prepared cucumber onto each crisp low-salt cracker. Then, artfully dollop either the pollack roe mayonnaise or the pollack roe cream cheese mixture on top of the cucumber.

Finally, garnish your canapés. Top the pollack roe mayonnaise and pollack roe cream cheese with the quartered Stevia cherry tomatoes, finely chopped Cheongyang chili pepper, and a fresh small basil leaf. This adds a final touch of color, flavor, and visual appeal, completing your delicious and attractive pollack roe canapés!
