  • 3 medium potatoes (about 520g after peeling)
  • 1 onion
  • A small amount of carrot
  • 3 Tbsp chopped green onion
  • 1/2 Tbsp fine salt
  • 3 Tbsp cooking oil
  • 1/2 Tbsp minced garlic
  • A pinch of black pepper
  • Sesame seeds

1. Peel the 3 medium potatoes and julienne them into approximately 0.5cm thick strips. Place the cut potato strips in cold water for about 10 minutes to remove excess starch. After soaking, drain thoroughly in a colander. This step is key to ensuring the potatoes don’t break apart and maintain a pleasant chewiness.

2. Place the drained potato strips in a pan suitable for sautéing. Sprinkle evenly with 1/2 Tbsp of fine salt and gently toss to combine. Let the potatoes sit for 20 minutes to allow them to salt and release their moisture, which contributes to a tender texture.

3. Slice 1 onion into strips about 0.5cm thick, similar to the potatoes. Finely julienne a small amount of carrot for color and sweetness.

4. Notice the liquid that has come out of the potatoes after salting. Do not discard this liquid! We will use this natural moisture to cook the potatoes. It’s important not to add any extra water.

5. Add 3 Tbsp of cooking oil, 1/2 Tbsp of minced garlic, and a pinch of black pepper to the salted potato strips. Mix well. Cover the pan and sauté over medium-low heat for about 3 minutes, shaking the pan or stirring occasionally to prevent sticking. After 3 minutes, add the julienned carrot and onion and continue to sauté for another 3-4 minutes. Finally, stir in 3 Tbsp of chopped green onion and sesame seeds to finish.
