Enjoy a satisfying and delicious meal in minutes with this perfectly balanced fried rice! With just rice and eggs, you can create a fantastic one-bowl dish without many other ingredients.
Basic Ingredients- 4 fresh eggs
- 1.5 stalks of scallions (use both white and green parts for sweetness and aroma)
- 2 bowls of warm rice (if using cold rice, warm it slightly)
- A pinch of black pepper (to remove odor and add flavor)
- 2 Tbsp oyster sauce (for a burst of umami)
- 3 Tbsp cooking oil (for a rich aroma)
Cooking Instructions
Step 1
First, prepare the scallions to add aroma to your fried rice. Wash them thoroughly, separate the white and green parts, and finely chop them. Slicing them thinly will prevent them from burning while stir-frying.
Step 2
In a large bowl, place 2 bowls of warm rice. Crack 4 fresh eggs into the bowl, add a pinch of black pepper, and mix everything together evenly with a spoon or spatula, ensuring the rice grains don’t clump. The trick is to coat each grain of rice with the egg mixture.
Step 3
Heat 3 tablespoons of cooking oil in a pan over medium heat. Add the chopped scallions and stir-fry until fragrant. Infusing the oil with scallion aroma will significantly deepen the flavor of the entire fried rice. Stir-fry until lightly golden, being careful not to burn the scallions.
Step 4
Once the scallion aroma is released, add the rice mixed with egg into the pan and stir-fry. Keep stirring and tossing quickly with a spatula to prevent the rice from clumping. It’s important to fry until the rice grains are fluffy and the eggs are cooked, coating the rice.
Step 5
When the rice is somewhat cooked and fluffy, pour 2 tablespoons of oyster sauce around the edges of the pan and stir-fry together. Mix quickly to ensure the oyster sauce coats all the rice grains evenly. The salty and sweet flavors of the oyster sauce will add a fantastic depth to your fried rice.
Step 6
Finally, taste the fried rice and adjust the seasoning. If it’s too bland, add a tiny bit more oyster sauce. The key is to achieve a delicious, perfectly balanced flavor without making it too salty.
Step 7
Serve the well-stir-fried egg fried rice attractively in a bowl. Depending on your preference, you can garnish it with cherry tomatoes, cucumber, or more chopped scallions. Serving it alongside some sweet fruits can also make for a refreshing and enjoyable meal. Enjoy your delicious meal!
