Main Ingredients- 1-2 Potatoes
- 1 handful Kimchi (finely chopped)
- 1 can Tuna (drained of oil or water)
Cooking Instructions
Step 1
This recipe introduces how to make a wonderfully soft and moist tuna kimchi pancake by incorporating a special ingredient: potatoes.
Step 2
First, wash the potatoes thoroughly, peel them, and then cut them into four pieces. This will help to reduce the cooking time.
Step 3
Fill a pot with plenty of water, place a steamer basket inside, and add the prepared potatoes. Steam them for 10 minutes. As the potatoes cook, they will add a fluffy texture to the pancake.
Step 4
Prepare the warm, steamy potatoes! They’re delicious on their own, but today we’re making something special.
Step 5
Place the 1-2 steamed potatoes into a bowl and mash them finely using a fork or a masher. It’s much easier to mash them while they’re still warm.
Step 6
Add the finely chopped kimchi to the mashed potatoes. If your kimchi is already sufficiently savory, you won’t need to add extra seasoning; the kimchi’s natural flavor will be delightful. Let the kimchi shine.
Step 7
Now, add 2 Tbsp of flour and mix well until everything is evenly combined. If the batter seems too runny, add a little more flour until it reaches a consistency that’s easy to pan-fry. This will help prevent the pancake from breaking apart and make it easier to shape.
Step 8
Completely drain the oil or water from the canned tuna using a sieve. It’s important to preserve the tuna’s original flavor.
Step 9
Add the drained tuna to the batter and mix everything thoroughly until well combined. Look forward to the fantastic harmony of potato, kimchi, and tuna!
Step 10
Now it’s time to cook. Add a generous amount of cooking oil to a non-stick pan and preheat over medium heat. Use a spatula to gently spread the oil evenly across the bottom of the pan.
Step 11
Using a large spoon, scoop portions of the prepared batter and place them onto the preheated pan. Shape them into round, slightly thick pancakes.
Step 12
Using two spatulas, gently flatten the batter into round, even shapes. Be mindful of any kimchi pieces sticking out from the edges, as they might fall off during cooking. Tuck them towards the center.
Step 13
Reduce the heat from medium to low. Once the edges of the pancake start to turn golden brown, carefully flip it over using two spatulas. This technique helps to prevent the soft batter from breaking. Add more cooking oil if needed and continue to cook until golden brown on both sides.
Step 14
For an even moister and softer texture, you can mix about 1 Tbsp of cooking oil into the batter before frying. Adding 2-3 Tbsp of kimchi juice will enhance the unique savory flavor of the kimchi pancake. (No extra water was added.)
Step 15
This recipe yields approximately 7 delicious potato tuna kimchi pancakes. The inclusion of potato makes for a wonderfully soft texture.
Step 16
Since the kimchi is quite savory, serving it with the steamed potatoes creates a perfect sweet and savory contrast, making it even more enjoyable.
