Earl Grey Madeleine Ingredients- 85g Eggs (at room temperature)
- 80g Granulated Sugar
- 85g Unsalted Butter
- 85g Cake Flour
- 10g Earl Grey Powder (or 2g finely ground Earl Grey tea leaves)
- 4-5 drops Vanilla Extract
- 3g Baking Powder
- Butter for greasing the madeleine pan
- A little extra flour for dusting
Cooking Instructions
Step 1
Start by gently whisking 85g of room-temperature eggs in a bowl. Add 4-5 drops of vanilla extract and mix lightly. The vanilla will help eliminate any eggy odor and enhance the overall flavor.
Step 2
Add 80g of granulated sugar to the egg mixture and stir gently until combined. You don’t need to whisk vigorously at this stage.
Step 3
In a separate bowl, weigh out 85g of cake flour and 3g of baking powder.

Prepare 10g of Earl Grey powder. If you are using loose Earl Grey tea leaves, finely grind about 2g of the leaves. It’s best to sift powdered ingredients to ensure a smooth batter. Combine the Earl Grey powder with the flour and baking powder.

Sift the combined dry ingredients (cake flour, baking powder, and Earl Grey powder) into the egg and sugar mixture. Give it a gentle stir to combine. Sifting prevents lumps and results in a smoother, lighter texture.
Step 6
Melt 85g of unsalted butter in the microwave. The ideal temperature for the melted butter is around 40-50°C (104-122°F). If it’s too hot, let it cool slightly before adding it to the batter to avoid cooking the eggs.
Step 7
Pour the slightly cooled melted butter into the bowl with the batter. Use a whisk to combine the butter and batter thoroughly until well incorporated and smooth. Ensure the butter is fully emulsified and not separating.
Step 8
Cover the bowl tightly with plastic wrap and refrigerate the batter for at least 1 hour to rest and mature. This resting period allows the flavors to meld and the texture to develop, leading to a more delicious madeleine. For even better results, you can refrigerate it for 2-3 hours or even overnight.

Prepare your madeleine pan by lightly greasing each mold with butter. Then, dust lightly with a little extra flour, tap out any excess, and set aside. This step ensures the madeleines won’t stick.

After resting, give the Earl Grey madeleine batter a gentle stir. Transfer the batter into a piping bag. Fill each mold of the prepared madeleine pan about 80-90% full. Be careful not to overfill, as the batter will expand while baking.

Preheat your oven to 190°C (375°F), then reduce the temperature to 180°C (350°F) before baking. Bake the madeleines for approximately 14-15 minutes, or until they are golden brown on top and the edges are lightly browned. Baking time may vary depending on your oven’s performance.
