Main Ingredients

  • 2 packs Udon noodles
  • 300g Pork loin or Beef brisket point (thinly sliced)
  • 2 cups Cabbage, shredded
  • 1 cup Carrot, julienned
  • 1/2 Onion, sliced
  • 2 cups Bean sprouts
  • 1/2 Scallion, chopped
  • Pinch of black pepper
  • Katsuobushi (bonito flakes), for garnish (optional)

Savory Soy Sauce Dressing

  • 6 Tbsp Soy sauce
  • 2 Tbsp Vinegar
  • 2 Tbsp Sugar
  • 2 Tbsp Water
  • 1 Tbsp Sesame oil

Cooking Instructions

Step 1

First, let’s prepare the magic soy sauce dressing that makes this dish so delicious. In a small bowl, combine 6 tablespoons of soy sauce, 2 tablespoons of vinegar, 2 tablespoons of sugar, and 2 tablespoons of water. Stir well until the sugar is completely dissolved. Taste and adjust the seasoning if needed. Finally, stir in 1 tablespoon of sesame oil for a rich aroma. Next, prepare your vegetables. Wash and thinly shred the cabbage. Julienne the carrot. Slice the onion. Rinse the bean sprouts under cold water and drain them well.

Step 1

Step 2

Prepare the udon noodles according to the package instructions. Most fresh udon noodles can be used directly, but if you’re using frozen udon, it’s helpful to briefly blanch them in boiling water and then rinse with cold water to prevent them from becoming mushy.

Step 2

Step 3

Now, let’s get cooking! Heat a generous amount of cooking oil in a large pan or wok over high heat. Add the thinly sliced meat (pork loin or beef brisket point) and the chopped scallions. Stir-fry quickly until the meat is no longer pink and the scallions are fragrant. This step is crucial for developing flavor.

Step 3

Step 4

Once the meat is partially cooked, add the shredded cabbage, julienned carrots, and sliced onions to the pan. Continue to stir-fry until the vegetables are slightly tender and translucent. You can add a pinch of black pepper at this stage to enhance the savory flavor and eliminate any meatiness.

Step 4

Step 5

When the vegetables are cooked to your liking, add the prepared udon noodles to the pan. Pour all of the reserved soy sauce dressing over the noodles and vegetables. Stir-fry vigorously over high heat, ensuring the sauce coats everything evenly. Use chopsticks or tongs to separate the noodles and mix well.

Step 5

Step 6

As the udon noodles absorb the sauce and become glossy, add the rinsed bean sprouts. Bean sprouts cook very quickly and can release a lot of water if overcooked, so stir-fry for just about 30 seconds to 1 minute, just until they are slightly wilted but still retain their crispness. Avoid overcooking!

Step 6

Step 7

Your delicious stir-fried udon is ready! Transfer it to a serving plate. For an extra touch of authentic Japanese flavor, sprinkle some katsuobushi (bonito flakes) on top. This simple yet incredibly tasty dish is now complete.

Step 7

Step 8

Enjoy your flavorful and satisfying bowl of stir-fried udon! Bon appétit!
