Main Ingredients

  • 1/2 block firm tofu (approx. 150g)
  • 1/4 zucchini (approx. 50g)
  • 1/3 carrot (approx. 30g)
  • 1/4 onion (approx. 30g)
  • 1 handful enoki mushrooms (approx. 50g)
  • 1/2 stalk green onion (approx. 30g)
  • 1 slice Spam (approx. 50g)
  • Rice paper wrappers (approx. 10-12 sheets)

Sauce

  • Sweet chili sauce (for dipping)

Cooking Instructions

Step 1

First, prepare the tofu. Slice half a block of tofu into 1cm thick pieces, then cut each piece into three smaller portions. This creates bite-sized pieces that fit well inside the rolls.

Step 1

Step 2

Heat a pan and place the tofu pieces in it. Add a little cooking oil and pan-fry until golden brown and slightly crispy. This gives the tofu a wonderful texture and enhanced flavor.

Step 2

Step 3

Thinly julienne the zucchini. Lightly oil a pan and sauté the julienned zucchini until it becomes tender.

Step 3

Step 4

As the zucchini cooks, remove the browned pieces to a plate. Continue adding the remaining julienned zucchini to the pan, cooking them on both sides until lightly golden. This ensures all the zucchini is cooked to a pleasant tenderness.

Step 4

Step 5

Thinly slice the carrot into flat pieces, and julienne the onion. Heat a pan with a little oil over medium-high heat and quickly stir-fry the carrots and onions until they are crisp-tender. Be careful not to overcook them.

Step 5

Step 6

Trim the base of the enoki mushrooms and separate them into smaller clusters. Without oil, lightly pan-fry the enoki mushrooms on both sides until they release their moisture and become slightly chewy.

Step 6

Step 7

Cut the green onion into manageable lengths, then slice them in half lengthwise. Slice the Spam into similar lengths. Lightly oil a pan and stir-fry the green onions and Spam together until lightly browned. The sweetness of the green onions complements the savory Spam wonderfully. (If preparing for children, you can omit the green onion or chop it very finely.)

Step 7

Step 8

Prepare your rice paper wrappers. Instead of the usual round ones, square rice paper wrappers can be easier to handle and roll.

Step 8

Step 9

Fill a microwave-safe bowl with water, enough to cover about half of the rice paper. Microwave for about 1 minute, or until the water is warm. Warm water helps soften the rice paper wrappers quickly.

Step 9

Step 10

Dip half of a rice paper wrapper into the warm water for a moment, then lift it out. Let it sit for a few seconds until it becomes pliable and soft. Be careful not to over-soak, as it can tear easily. (At this stage, you can customize the fillings for children or omit ingredients like green onion if preferred. Finely chopped green onion can distribute flavor better.)

Step 10

Step 11

Lay the softened rice paper wrapper flat. Place your prepared fillings – cooked tofu, zucchini, carrot, onion, enoki mushrooms, Spam, and green onion – onto the lower half of the wrapper. Fold the bottom edge up over the fillings, then fold in the sides, and finally roll it up tightly towards the top.

Step 11

Step 12

Slice the finished rice paper rolls into bite-sized pieces and arrange them on a plate. Serve with sweet chili sauce for dipping, adding a delightful sweet and sour kick. Enjoy your healthy and delicious rice paper rolls, a perfect blend of fresh vegetables and hearty ingredients!
