Introducing a super simple Miso soup recipe using miso paste, a Japanese seasoning. While Korean doenjang (soybean paste) is made solely from soybeans to create a deep flavor, miso paste often includes barley, rice, or wheat, giving it a characteristic subtle sweetness and smooth profile. Korean doenjang’s flavor deepens with longer simmering, but miso soup tastes best when lightly simmered to avoid any bitterness. This recipe is perfect for busy mornings or evenings when you crave a warm, comforting bowl of soup that can be ready in just 5 minutes. Try it for a quick and satisfying meal!
Main Ingredients- 1/4 block Tofu (approx. 75g)
- 1 handful Dried Wakame seaweed (approx. 5-7g)
- 1 liter Water (4 cups)
- 2.5 Tbsp Miso paste (adjust to taste)
Cooking Instructions
Step 1
First, roughly chop the dried wakame seaweed into bite-sized pieces (about 2-3 cm). Then, soak it in cold water for about 10 minutes until it softens. The seaweed will rehydrate nicely.
Step 2
Rinse the rehydrated wakame lightly in cold running water once or twice to remove any impurities, then drain it well in a colander. Transfer it to a bowl and snip it with scissors 2-3 more times for easier eating in the soup.

Cut the tofu into small cubes, about 1.5 cm in size. Cubing it makes it easy to scoop and enjoy with the seaweed.

The miso paste used here is a store-bought variety. It’s very convenient because you don’t need to prepare a separate broth. It’s typically thinner than regular Korean doenjang, so it dissolves easily and adds a smooth flavor.

In a pot, bring 1 liter of water to a rolling boil over high heat. Once the water is boiling, add the rehydrated wakame and the cubed tofu. Let it simmer briefly to cook the ingredients.

Now it’s time to add the miso paste, 2.5 tablespoons. It’s crucial not to add all the miso paste at once. It’s best to take out a little hot broth, dissolve the miso paste in it, then return it to the pot, or use a ladle to add it gradually while tasting. If you make it too salty from the start, it’s impossible to fix, so be sure to adjust the seasoning by tasting. Once the miso is dissolved, avoid boiling it for too long! Miso paste can develop a bitter taste if simmered for too long over high heat, so after adding it, just let it come to a gentle simmer for about 1-2 minutes. This is the secret to its delicious flavor.
