Main Ingredients

  • 2 bowls of multigrain rice (prepared warm)
  • 1 pack of sprout vegetables (washed clean)
  • 2 eggs (prepared as soft-boiled or hard-boiled)
  • 1 handful of chives (washed clean and finely chopped)
  • 3 lettuce leaves (washed clean)

All-Purpose Tuna Ssamjang

  • 1 can of tuna (drained)
  • 1.5 Tbsp doenjang (fermented soybean paste)
  • 0.5 Tbsp gochujang (red chili paste)
  • 0.5 Tbsp gochugaru (red chili flakes)
  • 1 pack of soft tofu (silken tofu)
  • 1/4 green onion (finely minced)
  • 1/4 onion (finely minced)
  • 1 Tbsp sugar
  • 1-2 cheongyang peppers (to taste, finely minced)
  • 0.5 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • Sesame seeds, to taste
  • 1 paper cup (200ml) water

Cooking Instructions

Step 1

First, prepare the vegetables for the bibimbap. Gently rinse the lettuce and sprout vegetables under running water and drain them completely to remove excess moisture. Wash the chives cleanly and chop them finely.

Now, let’s make the ‘All-Purpose Tuna Ssamjang’ to tantalize your taste buds! In a bowl, combine 1.5 Tbsp doenjang, 0.5 Tbsp gochujang, 0.5 Tbsp gochugaru, and 1 Tbsp sugar. Mix them well.

Next, add 1-2 finely minced cheongyang peppers (add more for extra spice if you like), finely minced onion, finely minced green onion, and 0.5 Tbsp minced garlic to the mixture.

Pour in 1 paper cup (200ml) of water and stir to dissolve all the ingredients thoroughly. Bring the mixture to a boil over high heat, then reduce to medium-low heat.

Once the ssamjang starts to bubble, add the entire drained can of tuna. Gently break up the tuna and stir it into the sauce to combine.

Add the entire pack of soft tofu, breaking it up gently with a spoon. Stir carefully to prevent sticking to the bottom of the pot, being mindful not to mash the tofu too much.

When the sauce thickens slightly, reduce the heat to low and simmer a bit longer to concentrate the flavors. Just before turning off the heat, stir in 1 Tbsp of sesame oil and a generous amount of sesame seeds to finish. Your delicious All-Purpose Tuna Ssamjang is ready!

Serve the warm multigrain rice in a bowl. Arrange the clean, drained lettuce leaves on top of the rice.

Generously pile the fresh sprout vegetables over the lettuce. Spoon the prepared All-Purpose Tuna Ssamjang on top. Finally, add a perfectly cooked fried egg as desired.
