Main Ingredients

  • Pork back ribs 1.8kg
  • Well-fermented Kimchi 1/2 to 1 head (aged kimchi recommended)
  • 1 Onion
  • 1 Green onion (scallion)
  • 1 piece of Ginger (garlic clove size)
  • 1/2 cup Cheongju or Mirin (100ml)
  • 1 tsp Whole peppercorns

Seasoning Sauce

  • 1 Tbsp Doenjang (soybean paste)
  • 2 Tbsp Gochujang (red chili paste)
  • 3 Tbsp Oligodang or Corn syrup
  • 2.5 Tbsp Minced garlic
  • 1 Tbsp Maesilcheong (plum extract)
  • 1 tsp Black pepper powder
  • 2 Tbsp Mirin or Cooking wine

Cooking Instructions

Step 1

If using frozen pork ribs, soak them in cold water for about 30 minutes to remove blood. There’s no need to soak them for too long before blanching.

Place the blood-removed pork ribs in a pot and add enough water to cover them. Add 1 tsp of whole peppercorns, 1 slice of ginger, and 1/2 cup of cheongju. Bring to a boil to remove any gamey odors and tenderize the ribs.

While the ribs are boiling, combine all the seasoning sauce ingredients (doenjang, gochujang, oligodang, minced garlic, maesilcheong, pepper, mirin) in a bowl. Mix well until smooth to create the seasoning sauce. This is a crucial step for the stew’s savory flavor.

Remove the boiled pork ribs from the pot and rinse them under cold running water. Rub them gently with your hands while rinsing to remove any impurities, repeating this 2-3 times. This ensures a cleaner tasting stew.

Now, layer about one-third of the well-fermented kimchi at the bottom of the stew pot. Avoid adding too much kimchi juice; spread the kimchi and its seasoning evenly to allow the flavors to meld.

Arrange half of the pork ribs on top of the kimchi layer. Then, spread half of the prepared seasoning sauce evenly over the ribs, ensuring they are well coated.

Add the remaining pork ribs, followed by all the remaining seasoning sauce. Top with the final third of the kimchi. Finally, pour in about 1 liter (approximately 4 cups) of water and bring to a boil over high heat.

Once the stew is boiling vigorously, reduce the heat to medium-low and simmer for about 30 minutes, or until the pork ribs are tender. While simmering, thinly slice the onion and roughly chop the green onion. After 30 minutes, add the prepared onion and green onion to the pot and let it simmer until the sauce thickens to your desired consistency.

Be cautious not to over-reduce on high heat at the end, as this can cause the bottom to scorch. Continue simmering until the sauce reaches your preferred thickness, and your delicious pork rib kimchi stew will be ready! Stir occasionally to prevent sticking.
