Cooking Instructions
Step 1
First, let’s prepare a generous batch of anchovy broth. By making about 3 servings, you’ll be ready to quickly whip up a delicious bowl for your hungry family anytime.
Step 2
Since Yu-bu Jjolmyeon is served with the noodles and tofu immersed in warm broth, it’s essential to make a deep and rich broth. Once the broth is ready, you can assemble this incredibly simple dish in just 10 minutes with only the jjolmyeon noodles!
Step 3
Add 2 tablespoons of soy sauce for soup (guk-ganjang) and 1 tablespoon of cooking wine (mirin) to the prepared anchovy broth to create the base flavor. Then, taste and adjust the seasoning with salt according to your preference. The result is a clean yet deeply satisfying broth.
Step 4
Boil the jjolmyeon noodles in water for a moment, then immediately rinse them briefly under cold running water. This step removes excess starch, preventing the broth from becoming cloudy and maintaining the chewy texture of the noodles. After rinsing, add the noodles to the prepared broth and simmer briefly.
Step 5
Now, add the jjolmyeon noodles to the broth. Then, add the fried tofu pouches, cut into bite-sized pieces, and finely chopped green onions. Simmer together for a short while. The fried tofu will absorb the broth and become tender, while the green onions add a wonderful aroma, enhancing the overall flavor.
Step 6
Finally, sprinkle with black pepper to your liking. Garnish with fresh perilla leaves (shiso) or a touch of chili powder for a visually appealing Yu-bu Jjolmyeon. If you enjoy a spicier kick, feel free to adjust the amount of chili powder!
