Pollock Roe Mayo Jeyuk Deopbap & Kimbap: A Special Dish Using Ryu Soo-young’s Pear-Marinated Pork Recipe
This Pollock Roe Mayo Jeyuk Deopbap and Kimbap, made using the famous Ryu Soo-young pear-marinated pork recipe, has been a winning combination. Even when I made the pear-marinated pork on its own, it was delicious, but turning it into this dish with pollock roe and mayonnaise was an absolute delight! It’s not only incredibly tasty but also very easy to eat. Even children will love it. 🙂
Ryu Soo-young’s Pear-Marinated Pork Recipe | Core Ingredients- 600g pork shoulder or front leg
- 2 Tbsp sugar
- 3 Tbsp soy sauce
- 3 Tbsp gochujang (Korean chili paste)
- 1 can (238ml) ‘Galamdeunbae’ (Korean pear juice drink)
- 2 Tbsp minced garlic
- 2 Tbsp vinegar
- 1 Tbsp sesame oil
- 1 stalk green onion
- 1/2 onion
- 1 pinch salt
- A little black pepper
- Sesame seeds (for garnish)

Cooking Instructions
Step 1
First, prepare 600g of pork shoulder or front leg. Pat the surface of the meat dry with paper towels to remove any excess blood. This step is crucial for eliminating any gamey odors and ensuring a cleaner flavor.

In a large bowl, combine the seasonings for the spicy pork. Add 2 tablespoons of sugar and 3 tablespoons of soy sauce. Then, generously scoop 3 tablespoons of gochujang (Korean chili paste) into the bowl. The generous amount of gochujang adds a deep, savory flavor.

As the name ‘GalaeJeyuk’ (pear-marinated pork) suggests, we’re adding Korean pear juice! Pour in 1 can (238ml) of ‘Galamdeunbae’ or any similar Korean pear drink. This not only tenderizes the meat but also adds a natural sweetness.

For an extra boost of flavor and to further combat any porky smell, add 2 tablespoons of minced garlic. Now, use a spoon or spatula to mix all the seasoning ingredients together thoroughly until well combined. Your delicious marinade for the spicy pork is ready!
