Main Ingredients- 1 can Spam (approx. 200g)
- 3 Vienna sausages
- 1/2 block firm tofu
- 1 slice processed cheese
- 3 Tbsp baked beans
- 1 handful fresh kimchi (approx. 100g)
- 1 bunch enoki mushrooms
- A small bunch of crown daisy (optional)
- 600ml water or anchovy-kelp broth
Cooking Instructions
Step 1
Slice the tofu into approximately 1.5cm thick, bite-sized pieces. Cutting them slightly thicker helps them hold their shape better in the stew.
Step 2
Trim the root end of the enoki mushrooms, rinse them lightly under running water, and then gently pull them apart into smaller strands. Slice the green onions diagonally.
Step 3
Open the Spam can and remove the contents. Slice it into approximately 1.5cm thick pieces. For the Vienna sausages, make a few diagonal cuts on each one; this helps them open up prettily as they cook and absorb more flavor. Slice them into manageable pieces.
Step 4
In a small bowl, combine 2 Tbsp gochugaru, 2 Tbsp guk-ganjang, 1 Tbsp gochujang, 1 Tbsp minced garlic, and a pinch of black pepper. Mix well to create the delicious Budae Jjigae seasoning. This mixture is key to the stew’s deep flavor.
Step 5
Arrange the Spam, Vienna sausages, kimchi, tofu, enoki mushrooms, and baked beans attractively in a large pot or a traditional Korean hot pot (jeongol-lute). This visual arrangement makes it look as good as it tastes, reminiscent of restaurant presentation.
Step 6
Evenly sprinkle the prepared Budae Jjigae seasoning mix over the ingredients in the pot. Ensuring the seasoning is distributed well is crucial for even flavor.
Step 7
Carefully pour in 600ml of water or anchovy-kelp broth until the ingredients are mostly submerged. Using broth will add an extra layer of savory depth to your stew.
Step 8
Bring the stew to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 10-15 minutes, allowing the ingredients to cook through and the flavors to meld beautifully. For the final touch, place the processed cheese slice and crown daisy on top as it simmers. Serve hot and enjoy your delicious homemade Budae Jjigae!
