How to Make Pumpkin Porridge with Sweet Potatoes
This delicious pumpkin porridge, made with sweet autumn pumpkins and sweet potatoes, is exceptionally tasty due to its natural sweetness. It’s a comforting and wholesome dish, perfect for a light meal or a satisfying snack. The rich flavor of the old pumpkin combined with the sweetness of sweet potatoes creates a universally loved taste.
Ingredients- 1.5kg old “맷돌” pumpkin (a type of Korean winter squash)
- 2 medium sweet potatoes
- 1 tsp salt
- 3 Tbsp oligosaccharide (or honey)
- 500ml water (approx. 2 cups)
Cooking Instructions
Step 1
First, carefully peel the tough skin off the old “맷돌” pumpkin. A knife or a peeler can be used. If the skin is difficult to remove, you can microwave the pumpkin for 2-3 minutes to soften it, making peeling easier.
Step 2
Peel the sweet potatoes as well. It’s best to wash the sweet potatoes thoroughly to remove any dirt before peeling them.
Step 3
Cut the prepared pumpkin and sweet potatoes into bite-sized pieces (about 2-3 cm). Place them in a pot and add enough water (500ml) to cover the ingredients. Bring to a boil over high heat, then reduce to medium-low heat and simmer until the pumpkin and sweet potatoes are very soft, which may take about 20-30 minutes.
Step 4
Check if the pumpkin and sweet potatoes are tender enough to be easily mashed with a fork. Once cooked, turn off the heat. Use an immersion blender or a regular blender to purée the ingredients until very smooth. Ensure there are no lumps for a creamy texture. If you don’t have a blender, you can mash them in the pot with a spoon or fork, but a blender will yield a smoother result.
Step 5
To the smooth pumpkin purée, add 1 tsp of salt, 3 Tbsp of oligosaccharide, and 500ml of water. Stir well with a spatula and bring to a gentle simmer. You can adjust the consistency to your preference by adding more water if it’s too thick, or simmering longer if you prefer a thicker porridge. Cook for about 5-10 minutes, stirring occasionally, until the porridge reaches your desired consistency. Your delicious pumpkin porridge is now ready!
