Essential Ingredients

  • 1 serving of sliced rice cakes for tteokguk (approx. 150-200g)
  • 500g rich beef bone broth
  • 1-2 frozen dumplings (optional)
  • A little bit of green onion (chopped)
  • A little bit of seasoned seaweed (gim)
  • 1 egg

Seasoning & Others

  • 1 Tbsp soy sauce for soup (guk-ganjang)
  • 1/4 Tbsp minced garlic (small teaspoon)
  • 1/2 tsp seasoned salt (mat-sogeum)
  • A pinch of salt (for adjusting seasoning)

Cooking Instructions

Step 1

Rinse the sliced rice cakes for tteokguk in cold water and soak them for about 10 minutes. This will make the rice cakes softer and more delicious when cooked. Gently separate the rice cakes occasionally to prevent them from sticking together.

Step 1

Step 2

While the tteokguk is cooking, let’s prepare the egg garnish. Whisk 1 egg with a pinch of salt in a bowl. It’s important to season it not too salty.

Step 2

Step 3

Heat a pan over medium-low heat, add a little cooking oil, and pour in the whisked egg thinly. If the heat is too high, the egg might burn, so it’s best to cook it slowly over low heat. Once the egg is cooked to a light golden brown, let it cool slightly and then slice it into long, bite-sized pieces for garnish.

Step 3

Step 4

Now it’s time to cook the tteokguk. Pour the rich beef bone broth into a pot and bring it to a boil over high heat. Once the broth is boiling vigorously, add the soaked rice cakes and stir to prevent them from sticking to the bottom of the pot.

Step 4

Step 5

After adding the rice cakes and bringing it back to a boil, add 1 Tbsp of soy sauce for soup to add depth to the flavor. Adding the soup soy sauce first will give the broth a more appetizing color.

Step 5

Step 6

Let’s add minced garlic (1/4 Tbsp), a flavor loved by Koreans, to enhance the aroma. The subtle garlic scent will elevate the taste of the tteokguk.

Step 6

Step 7

Now it’s time to season. Add 1/2 tsp of seasoned salt, and taste the broth. Adjust the saltiness to your preference by adding more or less salt. If you prefer less salt, reduce the amount, and if you like it saltier, add a bit more.

Step 7

Step 8

The tteokguk is almost done when the rice cakes are tender and floating to the surface. Finally, add some finely chopped green onion and simmer for another moment. The onion’s fragrance will blend into the broth, making it even more delicious.

Step 8

Step 9

Prepare the dumplings according to your preference. I microwaved mine briefly, but if you prefer softer dumplings, you can add them to the pot along with the rice cakes and simmer until fully cooked. It’s best to add them when you add the rice cakes.

Step 9

Step 10

Ladle the piping hot tteokguk into a bowl and beautifully arrange the prepared egg garnish and seasoned seaweed on top. Your hearty and visually appealing bowl of tteokguk is complete!
