Recipe Info

  • Category : Main dish
  • Ingredient Category : Vegetables
  • Occasion : Entertaining / Guests
  • Cooking : Others
  • Servings : 2 servings
  • Difficulty : Anyone

Ingredients

  • 20 sheets of rice paper (approx. 20 servings)
  • 1 fresh cucumber
  • 1 colorful bell pepper (choose your favorite colors)
  • 1/2 carrot
  • 1 handful of fresh sprouts (about 1 cup)
  • 4 large lettuce leaves
  • 3 imitation crab sticks
  • 1 small can of pineapple chunks (drained)
  • 100g beef or chicken breast (choose your preference)

Cooking Instructions

Step 1

Let’s prepare the vegetables first. Wash the cucumber, bell pepper, and carrot thoroughly. Remove any seeds from the bell pepper. Then, julienne them into sticks about 5-6 cm long. For the sprouts, rinse them gently under cold running water and drain them well in a colander. Ensuring they are dry is key to prevent the rice paper from tearing.

Step 1

Step 2

Wash the lettuce leaves clean under running water. You can either tear them into bite-sized pieces or chop them with a knife, then arrange them nicely on a plate. Cut the imitation crab sticks into strips similar in length to the julienned vegetables, about 5-6 cm. Dice the pineapple into easy-to-eat pieces.

Step 2

Step 3

Now, prepare the main protein. You can use thinly sliced beef or chicken breast. Sautéing or boiling it until tender will make it more enjoyable, especially for children.

Step 3

Step 4

It’s time to work with the rice paper. Fill a wide, shallow dish with warm water. The water should be comfortably warm to the touch, not hot. Dip one sheet of rice paper into the water for about 10 seconds, then immediately remove it. Soaking it for too long will make it too soft and difficult to handle.

Step 5

Carefully lay the softened rice paper flat on a clean cutting board or a large plate. Arrange your prepared fresh vegetables, protein, and pineapple pieces in the center of the rice paper. Be mindful not to overfill, as this can make rolling difficult. Fold the bottom edge of the rice paper up and over the filling, tucking it in snugly.

Step 5

Step 6

Next, fold the left and right sides of the rice paper inwards, neatly tucking them in. This creates a neat package and prevents the ingredients from spilling out.

Step 6

Step 7

Finally, starting from the bottom edge that you folded first, tightly roll the spring roll upwards towards the top. Gently ensure the rice paper wraps securely around the filling without tearing.

Step 7

Step 8

Cut the finished spring rolls in half for easy handling and arrange them attractively on a serving plate. Consider cutting them into sizes your child can easily pop into their mouth! Enjoy these fresh, healthy, and delicious Vietnamese spring rolls with your whole family!
