- All-purpose Flour 2 Tbsp

- Cooking Sake (Mirin or Rice Wine) 3 Tbsp

- Black Pepper a pinch
- Soy Sauce 3 Tbsp
- Cooking Sake (Mirin or Rice Wine) 3 Tbsp
- Minced Garlic 1/2 Tbsp
- Grated Ginger a pinch (optional)
- Oligosaccharide (or Honey/Sugar) 1/2 Tbsp (adjust to taste)
- Black Pepper a pinch
Cooking Instructions
Step 1
First, cut the pork belly into bite-sized pieces, about 3-4 cm long. Slice the scallions into similar lengths. Pre-cutting the ingredients will make the cooking process much smoother.
Step 2
Season the cut pork belly generously with salt and pepper. Add 2 tablespoons of cooking sake (or mirin/rice wine) to help tenderize the meat and remove any unwanted odors. Gently mix everything together and let it marinate for about 10 minutes.
Step 3
Sprinkle 2 tablespoons of all-purpose flour over the marinated pork belly and toss to coat evenly. Coating the pork belly with flour will help it achieve a crispier texture when grilled and will allow the glaze to adhere better.
Step 4
Heat a pan over medium heat and add a little cooking oil. Place the flour-coated pork belly in the hot pan. Once it starts to sizzle, reduce the heat slightly. Grill the pork belly, flipping it occasionally, until each side is golden brown and looks deliciously appetizing. Ensure it cooks evenly on all sides.
Step 5
Using the same pan where you cooked the pork belly, add the sliced scallions. Stir-fry them until they are lightly browned and slightly softened. The scallions will absorb some of the pork belly’s rendered fat, adding extra flavor.
Step 6
Now, let’s make the delicious special soy glaze! Push the cooked pork belly and scallions to one side of the pan. In the empty space, add all the glaze ingredients: 3 tablespoons soy sauce, 3 tablespoons cooking sake, 1/2 tablespoon minced garlic, a pinch of grated ginger, 1/2 tablespoon oligosaccharide (or honey/sugar), and a pinch of black pepper. Bring the glaze to a gentle simmer over medium-low heat. Once the sauce starts to bubble, add the grilled pork belly and scallions back into the sauce. Stir and cook for another 1-2 minutes until the glaze thickens slightly and coats the ingredients beautifully. Your savory and sweet soy-glazed grilled pork belly is now ready to be enjoyed with a side of warm rice!
