- 2 Cheongyang peppers (Korean chili peppers)
- 1 red chili pepper
- 1/4 green bell pepper
Spicy Sauce Ingredients- 1 paper cup (approx. 200ml) Tonkatsu sauce
- 1/2 Tbsp butter
- Pinch of black pepper
- 3 Tbsp minced onion
- 2 Tbsp minced carrot
- 1/3 paper cup (approx. 70ml) water
- 1 Tbsp oligosaccharide (or corn syrup)
Optional Ingredient- 1 egg
- 1 paper cup (approx. 200ml) Tonkatsu sauce
- 1/2 Tbsp butter
- Pinch of black pepper
- 3 Tbsp minced onion
- 2 Tbsp minced carrot
- 1/3 paper cup (approx. 70ml) water
- 1 Tbsp oligosaccharide (or corn syrup)
Optional Ingredient- 1 egg
Cooking Instructions
Step 1
First, finely chop the Cheongyang peppers and red chili peppers, removing the seeds if you prefer less heat. Thinly slice the green bell pepper after washing and removing its seeds.
Step 2
Pat the pork cutlets dry with a paper towel. Heat enough oil in a pan to about 170-180°C (340-355°F). Carefully place the cutlets in the hot oil and fry until golden brown and crispy on both sides. Drain excess oil on a wire rack or paper towels.
Step 3
Melt the butter in a pan over medium heat. Add the minced onion and minced carrot, and sauté until the onions become translucent and fragrant, about 3-5 minutes. This step builds a sweet aromatic base for the sauce.
Step 4
Pour in the Tonkatsu sauce and water. Add a pinch of black pepper. Stir well and bring to a simmer. Cook over medium-low heat, stirring occasionally, until the sauce thickens slightly to your desired consistency.
Step 5
Stir in the oligosaccharide (or corn syrup) to add a touch of sweetness and shine. Taste the sauce and adjust the sweetness according to your preference. The oligosaccharide helps balance the spiciness and richness.
Step 6
Add the prepared chopped Cheongyang peppers, red chili peppers, and sliced green bell pepper to the sauce. Stir-fry over high heat for about 1-2 minutes, just until the vegetables are tender-crisp. This preserves their fresh flavor and texture.
Step 7
Slice the crispy pork cutlets into bite-sized pieces and arrange them on a serving plate. Generously spoon the warm, spicy sauce over the cutlets. For an extra decadent touch, you can serve it with a fried egg on top. Enjoy your delicious Spicy Pork Cutlet!
