Ingredients

  • 2 room temperature eggs
  • 50g sugar
  • 100g almond flour
  • 5g baking powder
  • 40g melted butter or oil
  • Vanilla extract (optional)
  • Whipped cream for decoration (as needed)

Cooking Instructions

Step 1

First, sift the almond flour and baking powder together two times to ensure they are finely combined and free of lumps. This step is crucial for achieving a tender cake crumb.

Step 2

In a clean bowl, gently whisk the 2 room temperature eggs. You don’t need to whip them vigorously at this stage.

Step 3

Prepare a double boiler by placing a larger bowl filled with hot water over low heat. Set the bowl with the whisked eggs on top of the hot water bowl. Add the 50g of sugar to the eggs and mix.

Step 4

Using a hand mixer, whip the egg and sugar mixture. Start on low speed for 1 minute, then increase to medium speed for 2-3 minutes, followed by high speed for 1-2 minutes. Finish with low speed for another 1-2 minutes. Continue whipping until the mixture turns a pale ivory color and becomes light and fluffy. This step is key to the cake’s soft texture.

Step 5

Gently fold the sifted almond flour and baking powder mixture (from step 1) into the whipped egg mixture. Use a spatula and a folding motion, scraping from the bottom of the bowl upwards, to combine until no dry streaks remain. Be careful not to deflate the airy batter.

Step 6

Add the vanilla extract (if using) and the 40g of melted butter or oil to the batter. Gently mix until just combined and incorporated.

Step 7

Transfer the cake batter into a piping bag. Fill your prepared cake pan or muffin liners with the batter. Smooth the top surface of the batter with a spatula to ensure even baking.

Step 8

Bake in a preheated oven at 170°C (340°F) for approximately 25-30 minutes. To check for doneness, insert a skewer into the center; it should come out clean. Baking time may vary depending on your oven.

Step 9
