Craving something spicy on a day with a dull appetite? Introducing a simple, spicy mussel stir-fry bursting with flavor and texture. Adding tteokbokki rice cakes makes it a perfect simple meal, and it’s also fantastic as a late-night snack, a quick bite, or even as an accompaniment to drinks!^^
Ingredients- 500g mussels
- 200g tteokbokki rice cakes
- 150g broccoli
- 2 cloves garlic
- 1 piece butter
- 3 Tbsp chili sauce
- 1 Tbsp gochugaru (Korean chili powder)
- 2 bay leaves
- 1 Tbsp oligo-dang (corn syrup)
- 0.5 Tbsp hot sauce
- A pinch of herb salt
- A sprinkle of Parmesan cheese powder
Cooking Instructions
Step 1
Prepare all your ingredients! Thoroughly wash and chop everything before you begin. This is the first step to a delicious meal.
Step 2
Thinly slice the garlic. Cut the broccoli into bite-sized florets and blanch them in boiling water for about 1 minute. Immediately rinse with cold water to maintain a crisp texture.
Step 3
Rinse the cleaned mussels under running water. Scrape or pull off any beard-like threads. Place the mussels in a pot with water and bring to a boil. As soon as the mussels open wide (‘쩍’ is an onomatopoeia for opening), turn off the heat. Overcooking can make them tough.
Step 4
Once the mussels have opened, drain them and remove one of the shells, leaving only the half with the mussel meat attached. This makes them much easier to eat and present nicely.
Step 5
Melt the butter in a heated pan and sauté the sliced garlic until fragrant and lightly golden. Add the tteokbokki rice cakes and the prepared mussels, stirring to combine. Pour in the bay leaves, chili sauce, and oligo-dang, and stir-fry until the ingredients are well mixed. Add about 1/2 cup of the water used to boil the mussels. Continue to cook until the rice cakes become soft and chewy. Finally, stir in the gochugaru until evenly distributed.
Step 6
Add the blanched broccoli to the pan and stir-fry for another 1-2 minutes. Season with hot sauce and herb salt to taste, mixing well. Your delicious spicy mussel stir-fry is ready! Transfer it to a serving dish and sprinkle generously with Parmesan cheese powder for an extra burst of flavor. Enjoy your meal!^^
