  • Dried parsley flakes

Cooking Instructions

Step 1

Prepare the vegetables for the pasta. Dice the onion into 0.5cm cubes. Thinly slice the king oyster mushrooms lengthwise, then cut them into three pieces each for bite-sized portions. Mince the whole garlic cloves thinly. Having all your ingredients prepped makes the cooking process much smoother.

Step 1

Step 2

Heat a pan over medium heat and add 2-3 tablespoons of olive oil. Add the thinly sliced garlic and sauté it gently, almost like frying it, until it releases its fragrant aroma. Be careful not to burn the garlic; you want it to turn a light golden brown.

Step 2

Step 3

Once the garlic is a beautiful golden brown, add the diced onion and sliced mushrooms to the pan. Stir-fry them together for about 3-5 minutes until the onion becomes translucent and the mushrooms are tender. This process helps to bring out the natural sweetness of the vegetables.

Step 3

Step 4

When the vegetables are partly cooked, pour in 600ml of milk and add the 2 slices of cheddar cheese to create a creamy sauce. Stir continuously with a spatula or ladle until the cheese is fully melted and incorporated into the milk.

Step 4

Step 5

For a touch of spicy kick, crush 2-3 dried chili flakes (peperoncino) and add them to the sauce. You can add more if you enjoy spicier food. The chili flakes add a pleasant heat that balances the richness of the cream sauce.

Step 5

Step 6

Season the sauce with a pinch of black pepper and add 1 tablespoon of Parmesan cheese powder for extra flavor depth. Taste the sauce and add salt as needed to achieve a balanced taste. A little salt goes a long way in enhancing all the other flavors.

Step 6

Step 7

To make the sauce even richer and creamier, crack 1 egg yolk into the sauce. Whisk it in quickly to prevent it from scrambling. The egg yolk will emulsify into the sauce, adding a luxurious texture and flavor.

Step 7

Step 8

While the sauce is simmering, start cooking the pasta. Bring a large pot of water to a boil, add 1 teaspoon of salt, and then add 1 serving of spaghetti. Cook for about 8 minutes, which is roughly 1 minute less than the package instructions. Cooking the pasta slightly al dente ensures it will finish cooking perfectly in the sauce without becoming mushy.

Step 8

Step 9

After 8 minutes, drain the pasta, reserving some of the pasta water if needed, and immediately add it to the pan with the prepared cream sauce. Mixing the hot pasta directly into the sauce helps it absorb the flavors beautifully.

Step 9

Step 10

Using chopsticks or tongs, toss the pasta and sauce together over medium-low heat for 1-2 minutes, allowing the sauce to thicken and coat the noodles evenly. If the sauce seems too thin, turn off the heat and let it reduce slightly from the residual heat. Be careful not to over-reduce, as the pasta will continue to absorb the sauce as it sits, potentially making it too thick.

Step 10

Step 11

Transfer the finished Bulgogi Cream Pasta to a serving plate. For an extra special touch, top generously with warmed leftover bulgogi. Garnish with finely chopped scallions and dried parsley flakes for a beautiful presentation and an enhanced flavor profile. Enjoy your delightful homemade Bulgogi Cream Pasta!
