  • Ingredient Category : Pork
  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 3 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Beginner

Main Ingredients

  • 500g Pork (stew cut, such as pork shoulder is recommended)
  • 1/3 Zucchini
  • 1/2 Onion
  • 1/2 Green Onion

Spicy and Sweet Seasoning

  • 1.5 Tbsp Gochujang (Korean chili paste, up to 2 Tbsp based on preference)
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Corn Syrup or Allulose (for sweetness)
  • 1 Tbsp Soy Sauce
  • 2/3 Tbsp Fish Sauce (for enhanced umami)
  • 1 Tbsp Minced Garlic
  • A tiny amount of Ginger (grated or minced)

Cooking Instructions

Step 1

First, prepare the vegetables. Slice the zucchini and onion into bite-sized pieces. If you’re using thinly sliced pork, it’s best to cut the vegetables to a similar thinness for better integration. You can add chili peppers like jalapeños or Korean green peppers for an extra spicy kick, if desired.

Step 1

Step 2

Heat a pan over medium-high heat. Add the pork (stew cut) and stir-fry. If using a leaner cut like pork shoulder which has less fat, adding about 1 tablespoon of cooking oil will help prevent sticking and add a nice savory flavor.

Step 2

Step 3

Once the surface of the pork turns white and is partially cooked, add 1 tablespoon of mirin (or cooking wine). This helps to remove any porky odor and enhances the overall flavor as it cooks with the meat.

Step 3

Step 4

Now, let’s add sweetness to the dish. You can use corn syrup or sugar. If using sugar, start with a smaller amount. I used 1 tablespoon of Allulose for a healthier, subtle sweetness. Adjust the sweetness level to your liking.

Step 4

Step 5

It’s time to add the main seasoning! Add 1.5 to 2 tablespoons of gochujang (Korean chili paste) and stir-fry it with the pork. The amount of gochujang can be adjusted based on how spicy you like your food.

Step 5

Step 6

Add 1 tablespoon of soy sauce for saltiness and depth, 2/3 tablespoon of fish sauce for a rich umami boost, and 1 tablespoon of minced garlic for aromatic flavor. Stir well to combine everything and coat the pork.

Step 6

Step 7

Add the prepared zucchini, onion, and green onion to the pan. Gently toss everything together to ensure the vegetables are coated with the sauce.

Step 7

Step 8

After stir-frying briefly, cover the pan with a lid and let it simmer over low heat. This allows the vegetables to cook in their own juices along with the pork, helping the flavors to meld together beautifully and ensuring the dish doesn’t dry out.

Step 8

Step 9

Finally, taste the dish and adjust the seasoning if needed with a bit more salt or soy sauce. A pinch of black pepper, added to your preference, will further enhance the aroma and taste. Your delicious Spicy and Sweet Stir-Fried Pork with Zucchini is ready to enjoy!
