Main Ingredients- 2 semi-dried squid, cut into bite-sized pieces
- 1 packet curry powder (store-bought)
- 1 small carrot
- 1 potato
- 1 onion
- 1 small piece of butter (optional, for added richness)
- 700ml water
Cooking Instructions
Step 1
First, let’s prepare the vegetables for our rice bowl. Peel the potato, carrot, and onion, then wash them thoroughly. Dice them into pieces slightly smaller than bite-sized, so they maintain a pleasant texture when cooked in the curry. Place the prepared potatoes, carrots, and onions into a pot.
Step 2
Next, we have the star ingredient: semi-dried squid. Semi-dried squid offers a delightfully chewy texture that is even more delicious when simmered in curry compared to fresh squid. Cut the squid bodies and tentacles into manageable, bite-sized pieces. Add the cut squid to the pot with the vegetables.
Step 3
Now, let’s stir-fry everything to release the aromas. Add the small piece of butter to the pot. If you don’t have butter, you can skip it, but it adds a lovely nutty flavor that enhances the curry. Sauté lightly over medium-low heat for about 1-2 minutes, allowing the vegetables and squid to soften slightly and absorb the buttery aroma.
Step 4
Pour the 700ml of water over the sautéed vegetables and squid. Bring the mixture to a boil over high heat, then reduce the heat to medium-low. Let it simmer until the vegetables are tender. Skim off any foam that rises to the surface for a cleaner taste.
Step 5
Check if the potatoes and carrots are tender by piercing them with a fork; they should yield easily. Once the vegetables are cooked, it’s time to add the curry powder. You’ll need one packet of your favorite store-bought curry powder. To ensure it dissolves smoothly, you can mix the curry powder with a little water to form a paste before adding it to the pot, or add it directly and stir well to avoid lumps.
Step 6
After adding the curry powder, reduce the heat to low and stir continuously to prevent the curry from sticking to the bottom of the pot. Continue to simmer for another 2-3 minutes, stirring, until the curry reaches your desired thick and rich consistency. Your delicious squid curry rice bowl is now ready! Serve generously over hot steamed rice and enjoy.
