Main Ingredients- 130g Coconut Flour
- 70g Black Sesame Powder
- 80g Unsalted Butter
- 100g Allulose Sweetener
- 3 Fresh Eggs
- 0.5 tsp Vanilla Powder
- 0.5 tsp Salt
Cooking Instructions
Step 1
First, accurately measure 130g of coconut flour and 70g of black sesame powder using measuring cups and a scale. These two flours will determine the basic flavor and texture of your cookies.
Step 2
Next, prepare and mix in 100g of allulose sweetener. Allulose is used as a sugar substitute to reduce calories while adding sweetness.
Step 3
Crack 3 fresh eggs into a bowl and whisk them well. At this time, also add and mix in 0.5 tsp of vanilla powder to enhance the flavor. Vanilla extract or oil works just fine!
Step 4
Gradually add the whisked egg mixture to the black sesame and coconut flour mixture in three parts, mixing as you go. Adding all at once can make the dough too wet, so it’s important to adjust as you observe the consistency.
Step 5
Let the 80g of unsalted butter soften at room temperature beforehand. If it’s too hard, you can melt it gently in the microwave for about 30 seconds. Be careful not to overheat the butter.
Step 6
Add the softened melted butter and 0.5 tsp of salt to the dough. Knead thoroughly with a spatula or your hands until the butter and salt are well incorporated and the dough becomes cohesive. Continue kneading until it has a good elasticity.
Step 7
The consistency of the finished dough should be about right. Check if it’s neither too wet nor too stiff, and easy to shape with your hands. (Refer to the photo for guidance.)
Step 8
Take spoonfuls of the dough and roll them into balls. Then, gently press them down with your palm to flatten them into cookie shapes. If you have cookie cutters, you can also use them to create desired shapes. Shaping the dough nicely before baking is important.
Step 9
For an extra nutty flavor, you can top the cookies with sliced almonds. If using an air fryer, preheat to 180°C (350°F) for 5 minutes, then place the cookies inside and bake for 12 minutes. For more even baking, after about 5 minutes, flip the cookies and bake for an additional 3 minutes. If you prefer a chewier cookie, try baking at 170°C (340°F) for 12 minutes. Baking times and temperatures may vary depending on your appliance, so adjust as needed based on the cookies’ appearance.
